Dissolve yeast in warm water. Let it stand for ten minutes.

Heat the oil in a large pot over medium-high heat.
Stir in the carrots, cook until soft.
Add the vindaloo powder and tomato paste. Stir until they dissolve.
Stir in coconut milk, vegetable broth, and garbanzo beans.
Gently add tofu and stir together.
Simmer for fifteen minutes, until liquid is reduced by half.
