You don’t have to ignore your grill if you are a vegetarian, have a preference for vegetarian dishes or your guests don’t eat meat. There are a number of exciting vegetarian dishes that can be prepared on the grill that are flavorful and textured. Here are 6 vegetarian grilled dishes that won’t make you miss meat.

Grilled Yellow Squash


  • 2 medium yellow squash
  • 1/4 cup extra virgin olive oil
  • 1 clove crushed garlic
  • Salt and Pepper

1.  Fire up the grill at medium heat.
2.  Cut the squash horizontally into ½-inch thick slices. Pour olive oil in a small pan and heat it.

3.  Add in your crushed garlic. Cook until the garlic sizzles and the smell is pungent.

4.  Use a brush to coat the squash. Grill for 5 minutes per side and brush on more garlic to prevent the drying out of the squash.


Grilled Corn with Chive Butter

  • Ingredients
  • Sweet corn in husks
  • Melted butter
  • Minced chives
  • Tablespoon sugar
  • Lemon juice
  • Salt and pepper

1.  Soak the corn in cold water for at least 2 hours.

2.  Combine butter, chives, sugar, lemon juice, salt and pepper and heat at a low level.

3.  Peel back the corn husks but do not tear them off; get rid of all the silk. Brush butter mixture on the corn and pull the husks back up and tie with string.

4.  Place the corn on the grill for 25-30 minutes.


Grilled Portobellos with Mozzarella


  • Cherry tomatoes
  • Mozzarella cheese
  • Basil leaves
  • Olive oil
  • Garlic cloves
  • Salt
  • Pepper
  • Large Portobello mushrooms

1.  Combine tomatoes, cheese, basil, olive oil and garlic in a bowl and refrigerate.

2.  Spray mushrooms with cooking spray. Grill mushrooms over medium heat for 6-to-8 minutes per side.

3.  Pour tomato and cheese mixture into each mushroom.


Potatoes Plus


  • Red potatoes
  • Onion
  • Sweet red pepper
  • Seasoned salt
  • Garlic  powder
  • Dried basil
  • Parsley flakes
  • Butter

1.  Place the vegetable in folded-over heavy-duty aluminum foil. Add in seasoning and butter.

2.  Seal the aluminum foil.

3.  Grill for 15 minute on each side. Open carefully so steam can escape.


Grilled Vegetable Medley


  • Olive oil
  • Salt
  • Cherry tomatoes
  • Mushrooms
  • Parsley flakes
  • Corn on the cob
  • Zucchini
  • Summer squash
  • Sweet onion
  • Green pepper, diced
  • Butter

1.  Combine oil, salt, parsley and basil. Mix in vegetables so they get coated entirely with oil.

2.  Put mixture on heavy-duty aluminum foil. Add in butter and vegetables. Fold aluminum foil around vegetables and seal.

3.  Grill for 10 to minutes and then turn.
