Tasting notes: Hops are the rockstar of any good IPA, and this is no different. Pronounced bold Cascade hop character dominates the flavor and aroma of this beer with a subtle counterpoint of caramel malts and a hint of maple syrup on the back end to balance things out.

Food pairings: When we drank it, we cut up some bold aged cheddar, some cold leftover steak (grilled the previous night), set out some crackers, and topped it off with a fig jam to echo some of the sweetness of the maple syrup. It worked really well — especially the fig jam. On its website, Dogfish Head recommends serving it with burgers, grilled meats, and avocado.

Dogfish Head has earned a reputation for being an experimental brewery as as its helped define the American craft beer movement with unique brews. They offer a crazy-diverse variety of beer styles, both old and new, and have pretty badass labels to boot. Although this is my favorite beer they make, I am rarely disappointed by any of the beers in their portfolio.

As far as I’m concerned, 75 Minute is one of the best IPAs in America. The beer gets its name from the 75 minutes of continuous hopping during the brewing process. The alchemists at Dogfish Head also add a bit of maple syrup to this beer, creating the quintessential American IPA along the way. It’s robust, goes great with many different foods, and at 7.5% ABV, it will get you buzzed without knocking you out.

This beer is also bottle conditioned—meaning it’s bottled flat and the carbonation happens naturally in the bottle. With this type of brew, bottle conditioning leads to smaller bubbles, giving this beer my favorite sounds-dirty-but-it’s-not-dirty beer term: velvety mouthfeel, otherwise known as a silky-smooth texture. And after you’ve taken one gulp, I bet you won’t be able to stop. If you can make this bottle last longer than 75 minutes, you are a much stronger man than I.
