Beer: Stefon

Tasting notes: Stefon, a dark rye saison conditioned with the wild yeast brettanomyces is a big, complex, spicy beer. A dark brown farmhouse ale with a thick white head, Stefon is as mysteriously intriguing as its namesake, Bill Hader’s SNL character Stefon. Stylistically, the beer is a hybrid of a few, making it a fusion beer that becomes its own style unlike any beer I’ve ever tried.

Pairing ideas: This beer would pair perfectly with a burned-down warehouse party thrown by the Keebler Elves and the Rev. Al Sharpton. It would also be a nice refreshing beverage to accompany a Saturday evening with hobocops (homeless Robocops) and a bulldog that looks like Wilford Brimley while you’re wearing a human fanny pack. Or, pair it with a cheese ball rolled in bacon and pecans, grilled pork chops with heavily roasted brussels sprouts, or a pastrami sandwich on good rye bread.

Perennial Artisanal Ales makes some of the best beer in the Midwest. The newish brewery (open since 2011) possesses a portfolio of impressive Belgian and American style beers, many with the addition of fruits and spices and many that have been aged with wild yeast. This collaboration with Solemn Oath (in Naperville, IL) is playful and goofy in name, but is quite serious and complex in flavor. Grab yourself a bottle while you can, because just like the character, this Stefon won’t be around forever.
