  2. 3 oz Ginger Beer
  3. Cucumber slice
  4. Mint leaves
  5. Lemon wedges

How to Make It

Fill highball glass with ice. Add Pimm’s, then top with ginger beer, garnish with cucumber slice and mint sprig, and serve.

Why We Like It

The base spirit, Pimm’s No. 1 Cup, dates all the way back to 1840, when English fishmonger James Pimm introduced it to his London-area oyster bars. An herbal-based liqueur, No. 1 was originally intended as a digestive. But you really don’t need to know all that: just that every sip of this sweet, refreshing cocktail is like five seconds of summer, any time of year.
