How to Make It

On a plate, torch juniper berries until they’re on fire, then place your upturned glass over the berries to extinguish the flame and catch the smoke. Add the lemon juice and gin to a mixing glass and stir to combine. Flip the smoked glass over with the plate, letting the berries fall to the bottom. Add fresh ice to the glass and fine-strain the mixture over the ice. Add tonic and give it a quick stir. Garnish with a lemon wedge.

Why We Like It

The G&T may have its origins in anti-malaria strategies pursued by English colonialists, but it has been adopted and perfected by the Spanish. Traveling in San Sebastian, Spain a few years ago, we discovered Atari Gastroteka, where the Gin and Tonics are garnished with juniper berries. We felt like we'd never truly tasted a Gin and Tonic before. We’ve taken their idea one step further in torching the berries (available in the spice aisle at your supermarket) and letting the smoke fill the glass. You’ll find this to be a perfectly balanced refreshment that really elevates a beloved classic.
