How to Make It

Shake the booze in ice and strain into a chilled coupe. Squeeze the lemon peel so that the oils from the skin travel through the flame of a lighter.

Why We Like It

The Aviation is named for its cloudy sky color, and is more often served with a cocktail cherry, but we think the flamed lemon peel is a much better garnish for this drink. You’re expressing oils from the zest through a flame, which ignites them and gives a subtle smokiness to the drink. This is a classic cocktail with a century of history behind it, and you can distinguish your home bar by keeping its components on hand.
