  1. 1 ¼ ounce vodka
  2. ½ ounce Aperol
  3. ½ ounce elderflower liqueur
  4. 2 teaspoons rhubarb syrup
  5. ¾ ounce lemon juice
  6. ½ egg white
  7. Bitters for garnish

How to Make It

Add all of the ingredients to a cocktail shaker (without ice) and shake just long and hard enough to fluff up the egg white. Add a handful of ice and shake again, then strain into a chilled coupe glass. Garnish the surface of the drink with bitters. Enjoy.

This vodka-based cocktail from Gareth Evans at the Social Eating House in London serves as a relaxing reminder that flying is actually the safest way to get from Point A to Point B—and it will hopefully make your seatmates seem slightly less annoying.

Loosely based on a Clover Club, the Mile High Club features a clear base liquor and sweet and tangy mixers, along with an egg white and bitters at the end. But drink it while you’re on the ground; you’re not going to get a cocktail this good in the air—not even in first class.
