The Mojito


  1. 2 ounces white rum
  2. ½ ounce mint simple syrup
  3. ½ ounce fresh-squeezed lime juice
  4. Crushed ice
  5. Club soda
  6. Fresh mint for garnish

How to Make It

Add the rum, simple syrup and lime juice to a double rocks or old-fashioned glass. Stir and add a handful of crushed ice. Top off with club soda, garnish with lots of fresh mint, and enjoy.

Why We Like It

It’s almost August, or as I like to call it, “the armpit of summer.” If you’re not lucky enough to spend these nearly unbearable days poolside, I truly believe that the only way to survive is by consuming lots of refreshing drinks, preferably ones made with crushed ice and lots of fresh herbs. And since mint is super abundant right now, mojitos — rum and mint cocktails — are definitely the way to go.

Since we made a basil-mint simple syrup a couple weeks ago and I had tons left over, I used it as the base for this easy mojito. Alternatively, you could muddle the fresh-squeezed limejuice with 5 or 6 fresh mint leaves and a teaspoon of sugar before adding the rum and club soda.
