We’ve been fans of the bearded, Brooklyn-based chocolate makers Rick and Michael Mast and their handcrafted Mast Brothers chocolate bars for quite some time, so we were thrilled when they published “Mast Brothers Chocolate: A Family Cookbook” this fall. Everything we’ve tried has been fantastic, including these super-boozy, no-bake Chocolate Bourbon Balls.
If you need to make something for a holiday party, this should be your go-to recipe. With a few ingredients, and a couple simple steps, you get to be the guy who showed up with the badass whiskey dessert.
The bourbon flavor shines through more than any other element, so it’s imperative that you choose a good one. We used Black Maple Hill, a small-batch Kentucky bourbon, for ours and they were delicious. Whatever you pick, definitely heed the advice of the Mast Brothers: “Don’t forget to test the bourbon extensively for flavor before, during, and after preparation.”
Mast Brothers’ Chocolate Bourbon Balls
Makes 24 balls
4 cups vanilla wafers
1 cup pecan halves
1 cup powdered confectioners’ sugar
1 tablespoon cocoa powder
½ cup bourbon
Method: Mix the cookies, the pecans, ¾ cup of the sugar, and the cocoa powder in a food processor. Add the bourbon and combine. Using your hands, roll the mixture into small balls, then roll each ball in the remaining confectioners’ sugar to coat.
