Every man (and woman) should have that one special meal they can prepare on the spot. If you don’t have one yet, consider this one. It’s simple, it involves brandy and two kinds of fire, and it’s pretty much guaranteed to get you laid. Seriously, imagine the difference between these two texts: “Netflix and Chill?” or “Steak dinner, bottle of red wine, and chill?”
In fact, this is less of a recipe and more of a philosophy on a night in. The simplicity of this approach is what makes it great. Simple flavors done right can make the most amatuer cook appear brilliant. Buy high-quality steaks. Pick out some nice blue cheese — you don’t need much of it and bad blue cheese is really bad and good blue cheese is really good. As for mushrooms, we like to get a blend of mushrooms like shiitake, crimini and oyster mushrooms, but get whatever you like (or whatever looks good).
Now, unless your hip-hop album just debuted on the Billboard charts, you probably aren’t going to be serving the brandy with dinner. Instead, pick out a nice bottle of red wine at your local liquor store. You’re going to get the same bottle of wine you can get at a restaurant for way way less money. We love all of the Orin Swift blends, so for this meal, we got a bottle of Machete because the label was cool. You don’t have to judge a wine by the label, though. Just ask somebody — it’s literally their job to help you end up with a good bottle of wine.
Steak Dinner for Two
2 10 to 12-ounce steaks (we like KC strips)
Freshly ground black pepper
Blue cheese (we love both Point Reyes and Maytag)
Generously cover the steaks with olive oil and then add a dash of balsamic vinegar. Add salt and pepper, making sure to cover the sides of the steak as well.
Prepare your grill for direct grilling. Grill the steaks over the fire for 8 minutes, turning every 2 minutes. Remove the steaks to a plate, cover with crumbled blue cheese, and loosely tent the plate with aluminum foil.
Warm a frying over medium heat. Add a few tablespoons of olive oil, then the mushrooms, then sprinkle with salt and pepper. Let the mushrooms sizzle for 3 minutes. Toss the mushrooms and season with salt and pepper again and allow to sit for another 3 minutes. Stir the mushrooms, then add a shot of good brandy and (wait for it…) light that brandy on fire! Once the fire has gone out, allow the mushrooms to cook for another 3 minutes.
Add the mushrooms to the top of the steaks. Serve alongside arugula drizzled with olive oil and balsamic vinegar and a good bottle of red wine. Don’t drink too much though, you’re probably getting laid tonight.
