			<content:encoded><![CDATA[<p>Jumping from <a href="http://youtu.be/3-LMaHbFHbA" rel="nofollow">Illinois heroics</a> to NBA ball in 2005, Deron Williams quickly became one of the best point guards in the pros. The New Jersey Net has averaged more than 17 points and 9 assists for his career, played in multiple All-Star games—his third is this weekend—and won an Olympic gold medal. Any doubters were silenced Monday night when he dropped 38 on the Knicks to stop, for at least one game, the <a href="http://www.mademan.com/gallery/jeremy-lin-and-10-underdog-stars/">Lin-sanity</a>. But off the court, D-Will may be best known for looking seriously sharp in a <a href="http://www.mademan.com/dress-sharp-5-killer-suit-tips/">suit</a>. We caught up with Bonobos’ newest spokesman at NYC hotspot Catch Roof to talk style, <a href="http://www.mademan.com/beard-season-how-to-do-it-right/">beards</a> and where he’ll be playing next year. <p><strong>MADE MAN:</strong> <em>First off, how was playing in Turkey during the lockout?<br />
</em><strong>DERON WILLIAMS:</strong> I loved it. You know, besides basketball, just being able to live in another country, take my family over there, learn a new culture… it was a great experience. The people were amazing. I was surprised how noticed I was everywhere I went. I know Istanbul is generally a football city, but they caught on to basketball and there was a lot of love over there.</p>

<p><strong>MM:</strong> <em>Coming out of college, it didn’t seem difficult for you to adjust to the NBA game. But was it difficult to adjust to the NBA </em>style<em> game—dressing up in suits all the time?<br />
</em><strong>DW:</strong> My first year, I was wearing the big white tees with the stickers on still, big baggy pants, 4XL shirts. But once they put the dress code in, it got guys going. And every year, things got tapered in more and more. It was a good thing for me. I’m glad I’m not still wearing that big baggy stuff.</p>
<p><strong>MM:</strong> <em>How do you get your suits to fit you right? Because we know your wingspan is pretty wide.<br />
</em><strong>DW:</strong> Well, that’s what I love about Bonobos—the suits are pretty much made to fit me right off the rack. I stepped into this one I’m wearing, and it just took minor adjustments and I was ready to go. So it’s not too hard.</p>
<p><strong>MM:</strong> <em>Do you have a stylist?<br />
</em><strong>DW:</strong> I don’t have a stylist. I’ll just go through a store or a website and pick out stuff. I like to have my own style and kind of do my own thing.</p>
<p><strong>MM:</strong> <em>Some NBA guys like Dwyane Wade do have stylists. But isn’t that kind of cheating?<br />
</em><strong>DW:</strong> Those guys are trying to set trends. I go for the simple, classic look. I’m not trying to stand out in the crowd. You just add a little color to make things pop, and that’s how you get attention.</p>

			<content:encoded><![CDATA[<p>Nothing beats an ice-cold <a href="http://www.mademan.com/11-reasons-beer-is-better-than-wine/" target="_blank">beer</a>, but it takes a lot of work to get from barley and hops plants to that <a href="http://www.mademan.com/the-most-beautiful-girls-on-capitol-hill/">beautiful</a> can, bottle or glass in your hand. To better appreciate that process, we sat down with Molson master brewer Martine Bouthillier. Here’s what we learned about making the kind of beverage—like Molson M, the world’s only microcarbonated lager—that flies off the shelves in <a href="http://www.mademan.com/chickipedia/pamela-anderson/photosgallery/pamela-anderson-standing-determined-lots-leather-130876/">Canada</a>, <a href="http://cdn2.mademan.com/wp-content/uploads/2011/10/julianne-hough-american-flag-main1.jpg">America</a> and all over the <a href="http://www.mademan.com/worlds-six-tallest-buildings/">world</a>.</p>
<p><strong>Mashing<br />
</strong>“Of course we start with only the finest ingredients,” says Bouthillier, stressing the importance of quality from the beginning. This includes malted barley grown on the prairies of Canada. “First we mill the barley to expose the starch.” This process is called mashing. Enzymes break down the starches into simple carbohydrates that yeast can metabolize. This also creates three things: Alcohol (of course), carbon dioxide and flavors. “After about an hour all these ingredients have been been broken down to simple sugars.” The beer is then ready for the next step…<strong></strong></p>
<p><strong>Lautering<br />
</strong>“The best analogy is perhaps a giant coffee filter—we separate what’s left of the barley’s husk from the sugar solution.” The solution, called wort, is then boiled. Hops—female flower clusters of a hop species, Humulus lupulus, that act as a flavoring and stability agent—are added. This also takes about an hour. “The whole point of boiling the beer is first to sterilize it and second to dissolve the hops into the solution. Some color is generally added, but we also want to remove things like dimethyl sulfite, which smells a bit like canned corn.” After boiling the beer is cooled before yeast is added. The temperature varies by brand, but Molson cools theirs to 10 degrees Celsius.</p>

<p><strong>Fermentation, Maturation and Filtering<br />
</strong>Fermentation and maturation are the part of the process where wort becomes beer. “Fermentation takes 240 hours. It’s a very long and cold process.” This is where most of the alcohol and flavor comes from. The yeast is then removed from the beer because, in the words of Bouthillier, “it’s done its job.” It’s now time to mature the beer in food-grade stainless steel vats before filtering. This gives the beer the brilliant color, as well as rounding out the flavor notes to make them more balanced. Carbonation is then added, as fermentation provides only about half of the carbon dioxide in the final bottle of beer a customer drinks. All told, the process takes 21 days from the kettle to a bottle.<strong></strong></p>
<p><strong>Lagers Versus Ales<br />
</strong>Molson M is, of course, a lager. But how does the process differ for ales. “It’s mostly about what strain of yeast you use,” explains Bouthillier. Whereas yeast used in fermenting lagers settles on the bottom, ale yeast settles at the top of the cask. Other than that, the process is very similar.<strong></strong></p>
<p><strong>Dream Job?<br />
</strong>Becoming a brew master isn’t like getting a job at the local bottling plant. It takes years of specialized education. “I got my degree in microbiology, but I didn’t want to work in a lab,” notes Bouthillier. So he then attended Heriot-Watt University in Edinburgh, Scotland, to obtain his Master Brewer degree. Most folks seeking an advanced degree in beer brewing there had similar backgrounds, with biochemistry and microbiology being standard. After that he worked at a number of local Molson breweries before moving on to the home office. Lesson? Study science, focus more on your schoolwork than your 12-ounce curls and one day you just might become a master brewer yourself. Having lovely ladies serve it to thirsty customers is just a bonus, really.</p>

But it wasn’t until he went undercover with L.A. pick-up artists, transformed himself into the world’s greatest lothario and published <em>The Game</em> in 2005 that he created a cultural phenomenon—and got a guy named “Mystery” his own VH1 show. Since then, he’s authored more bestsellers, and he recently released a board game, <em>Who’s Got Game?</em> He told us the keys to picking up any <a href="http://www.mademan.com/how-to-close-the-deal-with-a-woman/">woman</a> and why lines like <em>“If I weren’t gay, you’d be so mine” </em>actually work. Seriously.</p>
<p><strong>MADE MAN:</strong> <em>What’s the most important thing a guy should know when he approaches a girl at a bar?<br />
</em><strong>NEIL STRAUSS:</strong> The thing guys always break is the three-second rule. Which is, as soon as you spot her, go and talk to her right away. The longer you hesitate and think about it and stare at her and check her out, the lower your chances go because you just seem like a weak, not confident guy, and plus you usually end up psyching yourself out and not approaching at all. So I would say the three-second rule.</p>

</em><strong>NS:</strong> The number-one mistake guys make is, they hit on a girl before she’s attracted to them. So the other thing I’d say is, if she’s already attracted to you, good, then you’re allowed to show interest. But not until she’s already interested. And most of the time she’s not going to be attracted initially.</p>
<p><strong>MM:</strong> <em>Some dating experts say negs, or backhanded compliments<strong>, </strong>don’t work—at least on anyone worth dating. What’s your response?<br />
</em><strong>NS:</strong> Some women are hit on so often that you have to, in some way, demonstrate <em>actively</em> that you’re not interested in them for them to get interested in you. They’re just used to being chased, and they’re going to be much more interested if they have to chase you. So whether it’s a so-called neg, which is being kind of cocky, teasing and funny, whether it’s showing you have other options, being sort of hard to read—there are many different ways to do the same thing.</p>
<p><strong>MM:</strong> <em>That line in </em>The Game—<em>“If I weren’t gay, you’d be so mine”—seems like it would be pretty effective in laying “uninterested” groundwork.<br />
</em><strong>NS:</strong> Yeah, exactly. It’s something they’re not used to hearing. Or, “You know what, this relationship isn’t working out.” Again, both lines show disinterest. So to me, a neg isn’t insulting someone. It’s just showing you’re not interested.</p>
