Infused liquor like the bacon or salmon vodka that got so much coverage is somewhat difficult to make, but extremely delicious. You can use it for so many things – drinking neat, making artisanal cocktails, making custom marinades. But, like many things worthwhile, it takes infuriatingly long. Well, no more. Here’s a hack to make your own custom flavor-infused liquor in just a few minutes.

The key is to us a cream whipper – the device that you use to create homemade whipped cream. All you have to do is put your spirit of choice into the chamber along with whatever herb, seed, or other food stuff you want to infuse it with, and attach a cartridge of NO2. There is some wiggle room in this delicious alchemy, but most infusions that Dave Arnold tested took between 1 and 3 minutes. Yes, that’s it. Rather than letting your bacon sit awkwardly in a bottle of booze in a window sill for a week, you can be having smoky, delicious shots in just minutes. Check out the site Cooking Issues for the full how-to.
