5 Cajun Side Dishes

1. Spicy Crab Salad

  • 1 small green cabbage shredded
  • 1 medium white onion minced
  • 1 pound white crab meat
  • 1/4 cup olive oil
  • 1/3 cup lemon juice
  • 1/2 teaspoon chili powder
  • 2 tablespoons mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Dash of hot sauce
  1. Wash and shred the cabbage using knife or grater.  Add to large bowl
  2. Cut the onion remove skin.  Mince and add to bowl.
  3. Add white crab meat.  Remove shells.
  4. Add olive oil, lemon juice and mayonnaise, Blend into salad well.
  5. Add garlic powder, chili powder and paprika.  Stir well.
  6. Chill for an hour covered in refrigerator. Serve.

2. Spicy  Rice

  • 1 cup rice
  • 2 cups vegetable stock
  • 1 cup chopped green onions
  • 1 tablespoon hot sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  1. On the stove bring two cup vegetable stock to a boil in a saucepan. Add one cup of white rice.
  2. Add the chopped green onion. Stir into the pot.
  3. Add dry spices of cumin, chili powder and garlic.  Stir well mixing evenly.
  4. Cook over medium high about 20 to 25 minutes until done. Serve hot.

3. White Beans with Onions and Red Peppers

  • 2 cans of white beans drained
  • 1 cup chopped green onions
  • 1 cup red bell peppers sliced
  • 1 teaspoon minced garlic
  • 1/4 cup chopped parsley
  • 1 tablespoon hot sauce
  • 1/2 cup white wine
  • 1 tablespoon olive oil
  1. On top of stove heat olive oil in medium saucepan.  Chop the green onions and peppers.
  2. Saute the peppers and onions about 10 minutes in oil.  Add the two cans drained white beans. Stir well.
  3. Add the 1/2 cup white wine stir. Add minced garlic, parsley and hot sauce.
  4. Cook over medium heat about 5 minutes until hot.  Serve add salt and pepper to taste.


4. Cajun Corn

  • 1 tablespoon olive oil
  • 1/2 cup green scallions
  • 1 red bell pepper sliced into strips
  • 1 cup fresh or frozen corn kernels
  • 4 ounces of tomato sauce
  • 1/4 cup white wine
  • 1 tablespoon hot sauce
  1. In a medium fry pan heat the olive oil.  Chop the scallions and pepper and saute about 5 to 10 minutes over medium heat.
  2. Add the fresh or frozen corn kernels. Stir well.
  3. Add the tomato sauce, wine and hot sauce. Stir well.
  4. Cook over medium heat about 15 minutes.
  5. Serve hot.

5. Easy Bananas Foster

  • 2 bananas peeled and sliced
  • 1/2 stick butter cut into pieces
  • 1 cup dark brown sugar
  • 1 teaspoon cinnamon or allspice
  • 4 ounces dark rum
  • vanilla ice cream
  • whipped cream
  1. In a saute pan melt the butter.  Add the sliced bananas.
  2. Add the brown sugar, cinnamon and rum.
  3. Saute over medium heat until bananas are coated with sugar and rum. 
  4. Serve sauteed bananas over vanilla ice cream with sauce.
  5. Top with whipped cream. Do not flame.
