5 Christmas Dessert Recipes For Diabetics
These five Christmas dessert recipes for diabetics will make your holiday a lot less challenging. Being a diabetic is hard enough without watching everyone else wolf down pumpkin and pecan pies, egg nog, and Christmas candy. Most of these recipes use Equal as a sugar substitute unless stated otherwise.
Christmas Pumpkin Pie for Diabetics
- 2 eggs
- 1 can pumpkin
- 3/4 cup Splenda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon clove
- 1 can evaporated milk
- 1 unbaked pie crust
- Preheat oven to 425 degrees.
- Mix all ingredients in large bowl and pour into pie shell.
- Bake for 15 minutes, then turn oven down to 350 and cook 40 minutes.
- Check for doneness. When you stick a knife in and it comes out clean, your Christmas Dessert is done.
Christmas Sugar-Free Fudge for Diabetics
- 3 cups carob
- 1/4 teaspoon artificial sweetener
- 1 can sweetened condensed milk
- 1 cup chopped walnuts
- 1 teaspoon vanilla
- 48 walnut halves
- pinch salt
- In saucepan on low heat mix carob, sweetener, and milk.
- Mix in remaining ingredients except walnut halves.
- Spread into a 9 x 9 inch pan and chill. Cut into squares and top each one with a walnut half.
Christmas Sugar-Free Pecan Pie for Diabetics
- 1 unbaked pie crust
- 5 teaspoons Splenda
- 1 cup sugar free syrup
- 1 teaspoon vanilla
- 3 eggs
- 1 cup pecan halves
- 1/3 cup butter, melted
- Mix all ingredients in a bowl and pour into pie crust.
- Bake at 350 for 40 to 50 minutes. Cool and serve.
Christmas Peppermint Pattie Pie for Diabetics
- 18 miniature sugar free Peppermint Patties
- 1 baked pie crust
- 1 package cook and serve sugar free vanilla pudding
- 1 tablespoon cocoa
- 2 cups milk
- whipped cream
- Mix pudding and cocoa in saucepan and add milk.
- Cut 10 patties into quarters and add to mixture, stirring until melted and smooth.
- Pour into pie shell and chill.
- Serve with whipped cream and pattie on each piece.
Christmas Maple Sugar Candy for Diabetics
- 3 cups sugar free maple syrup
- 1/4 cup butter
- 1 cup cream
- 1 cup chopped nuts
- 1 teaspoon lemon extract
- Cook syrup, butter, and cream in saucepan until smooth.
- Remove from heat and add nuts and lemon, stirring for several minutes.
- Pour into greased pan, cool, and cut into squares.
