Christmas Eve dinner ideas should include food that is light enough not to disturb the sleep, but delicious enough that your children will always remember the joys of Christmas Eve with mom and dad.
To make Salisbury steak for Christmas Eve, you will need:
- A two-pound flank steak
- Salt and pepper
- Flour for coating
- 4 tablespoons oil
- 2 onions, peeled and sliced
- 1 small can tomato sauce
- Chop the flank steak into four pieces. Beat the flank steak thoroughly to soften the meat.
- In a large cast iron skillet, heat the oil. In a plate, put some flour, salt and pepper.
- Coat the steak in the flour mixture and set aside. Add the steak to the hot oil.
- Add in the slices of onions with the steak. Cook the meat on both sides until crispy brown.
- Add in the tomato sauce and enough water to cover the steak. Cook over a medium heat until the sauce is thick and the meat is done.

To make simple individual meatloaves, you will need:
- 1 pound ground sirloin
- 12 to 15 saltine crackers, smashed

- In a large bowl, mix all of the above ingredients together. Shape the individual meatloaves into small oval shapes around three to four inches long.

- 2 1/2 pounds chuck roast
- 2 tablespoons vegetable oil
- Salt and pepper
- 4 large potatoes, peeled and chopped
- 2 carrots, peeled and cut into large chunks
- Place the oil in a large cast iron skillet. When the oil is hot, lay the roast in the skillet to be browned on both sides.
- Add in the potatoes and carrots around the roast. On the roast, cut thick slices of onions and lay on top.
