1. Cherry Eggnog Nut Loaf

  • 2 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 1/3 cup canola oil
  • 1 1/4 cups eggnog
  • 1/2 cup chopped walnuts
  • 3/4 cup maraschino cherries, chopped
  1. Preheat oven to 350 degrees and spray two 8x4x2-inch loaf pans with non-stick cooking spray.
  2. Stir together the flour, sugar, baking powder and salt.
  3. In a separate bowl, stir together the eggnog and oil.
  4. Add the dry ingredients to the bowl of wet ingredients, mixing well.
  5. Fold the cherries and nuts into the mix.
  6. Pour into the two loaf pans and bake for 45 minutes or until tested done with toothpick.

2. Pumpkin Bread

  • 3 cups self-rising flour
  • 1 1/2 cup sugar
  • 1 tbsp. cinnamon
  • 2 cups canned pumpkin
  • 3 eggs
  • 1 cup canola oil 
  1. Preheat oven to 350 degrees and spray two 8x4x2-inch loaf pans with non-stick cooking spray.
  2. Pour all ingredients into a large mixing bowl and blend thouroughly with a mixer on medium speed.
  3. Pour into the loaf pans and bake for 50 minutes.

3. Pecan Cherry Bread

Two Christmas staples combine for an easy bread recipe that is good enough for company.

  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup sugar
  • 1/2 cup butter
  • 1 tsp. vanilla
  • 2 eggs
  • 1 cup buttermilk
  • 1 cup walnuts, chopped
  • 1 cup maraschino cherries, chopped
  1. Preheat oven to 350 degrees and spray a 9x5x3-inch loaf pan with non-stick cooking spray.
  2. In a large bowl, stir together the flour, baking soda and salt.
  3. In separate bowl, cream together the sugar, butter, eggs and vanilla until fluffy. 
  4. Add the dry ingredients into the wet ingredients a little at a time, stirring after each addition.
  5. Fold in the cherries and nuts.
  6. Pour into pan and bake for 55 minutes or until cake tests done.

4. Date Nut Bread

This easy Christmas bread recipe uses chopped dates for a moist, flavorful bread.

  • 4 eggs
  • 1 cup sugar
  • 1/2 cup canola oil
  • 1 cup sifted all-purpose flour
  • 1 tsp. salt
  • 1 lb. chopped dates
  • 4 cups whole pecans
  1. Preheat oven to 300 degrees and spray a 9x5x3 loaf pan with non-stick cooking spray.
  2. Beat together the eggs, oil and sugar. Add the dry ingredients.
  3. Fold in the dates and pecans.
  4. Pour into pan and bake for 2 hours and 15 minutes.

5. Gingerbread

This bread recipe won't make a gingerbread house, but it does make wonderfully aromatic bread.

  • 3 eggs
  • 1 cup sugar
  • 1 cup molasses
  • 1 tsp. powdered ginger
  • 1 tsp. powdered cloves
  • 1 tsp. cinnamon
  • 1 cup canola oil
  • 2 tsp. baking soda
  • 2 cups flour
  1. Preheat oven to 350 degrees and spray an 8x12x2-inch rectangular pan with non-stick cooking spray.
  2. Mix all ingredients except the baking soda and flour. Dissolve the baking soda in 1/8 cup water and add to mix.
  3. Add the 2 cups flour to the mix.
  4. Add 1 cup boiling water to the mix while whisking the mix lightly. The batter will be thin.
  5. Pour into the pan and bake for 45 minutes until cake tests done.
