 Easy Italian Christmas Eve Bean Soup With Sausage Recipe

  • 4 ½ oz. small shell pasta
  • 5 Italian sausages, sliced
  • 1 garlic clove, crushed
  • 2 medium leeks, sliced
  • 2 tsp. olive oil
  • 2 large carrots, cut into small cubes
  • 2 tbs. all-purpose flour
  • 1 (16 oz.) can three bean mix, drained
  • 8 cups hot water
  • ½ cup white wine
  • 2 beef  stock cubes
  • salt and pepper
  1. Heat the oil in a medium saucepan.
  2. Add the sausage, and cook until golden. Remove it from the saucepan.
  3. In the same saucepan, saute the leek, garlic, carrot and celery.
  4. Add the flour, and cook for a minute.
  5. Add the beef stock cubes, and then, gradually, stir in the water and wine.
  6. Bring to a boil, reduce the heat, and simmer for ten minutes.
  7. Add the pasta and beans. Cook, until the pasta is tender.
  8. Add back the sausage; season with salt and pepper.

Easy Italian Christmas Eve Spaghetti And Mussels Recipe

  • 3 lbs. 5 oz. mussels in the shell
  • 1 lb. spaghetti, cooked
  • 2 tbs. fresh basil, chopped
  • 2 tbs. fresh parsley, chopped
  • 1 onion, finely sliced
  • 2 tbs. olive oil
  • 2 garlic cloves, crushed
  • 1 (15 oz.) can tomatoes
  • 1 cup white wine
  1. Wash the mussels and remove their beards.
  2. Heat the oil in a large pan, and saute the onion and the garlic, until tender.
  3. Add the crushed tomatoes, wine and herbs.
  4. Season with salt and pepper, and bring to a boil.
  5. Lower the heat, and simmer until thick.
  6. Add the mussels, and cook for five minutes.
  7. Discard any mussels that didn’t open.
  8. Serve the mussels and sauce over hot, cooked spaghetti.

 Easy Italian Christmas Eve Butterfly Salad With Sun Dried Tomatoes Recipe

  • 1 lb. 2 oz. butterfly pasta
  • 1 ¾ oz. sun dried tomatoes, cut into strips
  • 1/3 cup toasted pine nuts
  • 3 scallions, finely sliced
  • 1 stalk fresh spinach
  • 1 tbs. fresh oregano, chopped

Dressing:

  • ¼ cup olive oil
  • 1 garlic clove, crushed
  • 1 tsp. fresh chopped chili
  1. Combine the oil, chili and garlic in a small jar. Season with salt and pepper.
  2. Shake well.  

Dish:

  1. Cook the pasta in a large saucepan of boiling water, until tender.
  2. Drain the pasta, and rinse it under cold water.
  3. Transfer it to a bowl.
  4. Add the remaining ingredients.
  5. Pour the dressing over the salad.

  Easy Christmas Eve Tortellini With Mushroom and Gruyere Sauce Recipe

  • 1 lb. 3 oz. chicken or cheese-filled herb tortellini
  • 7 oz. mushrooms, sliced
  • 3 ½ tbs. Gruyere cheese, grated
  • ½ cup pine nuts, toasted
  • 3 ½ oz. butter
  • 3 scallions, chopped
  • 2 tbs. all-purpose flour
  • 1 ½ cups milk
  • ½ cup cream 
  1. Cook the tortellini in a large pan of boiling water until tender, and drain.
  2. Melt half of the butter in a medium pan and saute the scallions and the mushrooms. Set aside.
  3. In a different pan, melt the remaining butter. Add the flour, and stir well.
  4. Cook the butter and flour for two minutes and gradually, incorporate the milk and cream, stirring until thick.
  5. Add the cheese, mushrooms, salt and pepper.
  6. Place the tortellini in a bowl, and pour the sauce over.
  7. Sprinkle with the roasted pine nuts.    

 Easy Italian Christmas Eve Chocolate Tiramisu Recipe

  • 2 packages (8 oz) cream cheese
  • 2 cups powdered sugar, sifted
  • 2 1/4 cups whipping cream
  • 1 cup hot, strong, brewed coffee
  • ¾ cup semisweet chocolate chips
  • 50 crisp ladyfinger
  • ¼ cup rum
  • cocoa powder
  1. Beat the cream cheese until smooth.
  2. Add the powdered sugar and mix well.
  3. Add the cream and combine well. Set aside.
  4. In a small bowl, whisk the hot coffee, chocolate chips and rum.
  5. Dip half of the ladyfingers in this mixture, and place each of them in an even layer in the bottom of a baking pan.
  6. Pour half of the cream mixture over ladyfingers.
  7. Continue alternating layers of dipped ladyfingers and cream until reaching the top of the pan.
  8. Refrigerate tiramisu overnight.
  9. Sprinkle with cocoa powder.
