5 Easy Meals for Busy People

  1. Stir-fry. Stir-fry is versatile, healthy, and best of all, quick. Busy people can customize this dish to suit their tastes and use whichever ingredients are handy. Simply chop your preferred meat (chicken, beef or pork) and your favorite vegetables (red peppers, onions, carrots, broccoli and peas, for example) into bite-sized pieces and toss them into a wok or large frying pan with a tablespoon of oil. Add a tablespoon of flour and a few splashes of teriyaki sauce. Sauté the meat and vegetables over medium-high heat, stirring constantly until the meat is cooked through and the vegetables are crisp and tender. Season with garlic powder, salt and black pepper as desired.

  2. Pasta with sauce and veggies. Pasta makes an ideal dinner for busy people since preparing it is as simple as boiling water and giving the pot an occasional stir. To make this easy meal, bring a large pot of salted water to a boil. Meanwhile, cut your favorite vegetables into bite-size chunks and place them in a saucepan over medium heat. Pour a jar of pasta sauce over the vegetables and heat until they’re cooked through. When the water comes to a boil, add a box of your favorite pasta and cook according to package directions. Drain the pasta and top it with the sauce.

  3. Grilled chicken and baked potatoes. A few minutes of morning prep will make this easy meal of chicken and potatoes extra flavorful. Place chicken breasts in a large plastic freezer bag and add minced garlic, olive oil, Italian salad dressing and black pepper. Refrigerate for several hours then grill until cooked through. To prepare baked potatoes, rub potatoes with olive oil, salt and pepper, then wrap individually in foil and grill for 45 minutes to an hour. Serve with grilled vegetables or a salad.

  4. Tacos. No matter how busy you are, tacos are one easy meal you always have time for. Just heat ground beef in a pan until cooked through and add a packet of taco seasoning, following any further instructions on the package. Heat tortillas or taco shells in the oven for several minutes and place the cooked beef inside. Top with shredded lettuce, cheese, sour cream, salsa or any desired topping.

  5. Chicken and bean tortilla soup. A stack of cans makes an easy meal surprisingly delicious when the right seasoning is added. In a large stockpot, stir together a can of black beans, a can of chili beans, a can of corn, a can of tomato sauce, two cans of diced tomatoes with green chilies, a can of chicken broth, a packet of taco seasoning and three skinless chicken breasts. Cook over medium-high heat. When the chicken breasts are cooked through, remove them from the pot, shred the chicken with two forks, and return the meat to the soup. Simmer over low heat for 30 minutes. Serve topped with crushed tortilla chips, sour cream and shredded cheddar cheese. You can also put all the ingredients in slow cooker in the morning and cook on the lowest setting until dinnertime.
