Pumpkin Pie

Ingredients:     

  • 1 -1/4 C. Evaporated Milk                                         
  • 2-1/2 C. Granulated Sugar
  • 1 2/3 t. Pumpkin pie spice
  • 4 well-beaten Eggs                                                     
  • 2 Deep pie shells (uncooked)
  1. Preheat oven to 375 degrees F.
  2. Mix all ingredients thoroughly.
  3. Pour into two deep, unbaked pie shells.
  4. Bake for about 50 minutes, or until a knife comes out of the center clean.

Apple Dumplings

Ingredients:

  • 6 Apples
  • 2 C. Flour                               
  • 1 t. Salt
  • 2/3 C. Shortening                   
  • ¾ C. Water
  • 1 C. sugar
  • 2 Cups water
  • 3 tablespoons butter
  • 1/4 teaspoon cinnamon.

Filling (Make crust for six dumplings):

  • ½ C. Sugar                             
  • 1 ½ t. Cinnamon
  • 1 t .Butter  
  1. Peel and core apples.
  2. Fill with filling.
  3. Roll out crust into six squares. Place an apple in each square and draw up crust around apple and pinch top together.
  4. Boil together the water, sugar, butter and cinnamon. 
  5. Put dumplings in baking pan, pour over with syrup and bake 30 minutes at 350 degrees F.

Oat Cookies

Ingredients:

  • 1 C. Shortening                      
  • 1 t. Baking powder
  • 1 C. Sugar                              
  • ½ t. Cinnamon
  • ¼ t. Nutmeg                           
  • ½ t. Salt
  • 1 C. Brown sugar                   
  • 2 Eggs
  • 1 t. Vanilla                             
  • 3 C. Rolled oats, uncooked
  • 1 C. Flour
  1. Place shortening, sugars, eggs and vanilla into mixing bowl. Mix thoroughly.
  2. Sift together flour, baking powder, salt, cinnamon and nutmeg.
  3. Add to shortening mixture.
  4. Mix well.
  5. Stir in oats.
  6. Drop from teaspoon onto greased cookie sheets. Bake at 350 degrees F for twelve to fifteen minutes.

Scottish Samhain Fancies

Ingredients:

  • 1 Egg                                      
  • ¾ C. Rolled Oats
  • ½ C. Sugar                             
  • ¼ C. Cocoanut
  • ¼ t. Vanilla                            
  • 1/3 t. Salt
  1. Beat egg until light.
  2. Add sugar and beat.
  3. Stir in remaining ingredients.
  4. Drop Scottish Samhain fancies by teaspoonful onto greased cookie sheets. Bake at 300 degrees F.

Gingerbread

Ingredients: 

  • ½ C. Boiling water                 
  • ½ t. Salt
  • ½ C. Shortening                     
  • ½ t. Baking powder
  • ½ C. Brown sugar                  
  • ½ Soda
  • ½ C. Light molasses               
  • ¾ t. Ginger
  • 1 Well beaten Egg                  
  • ¾ t. Cinnamon
  • 1 ½ C. Flour
  1. Pour water over shortening.
  2. Add sugars, molasses and egg.
  3. Beat well.
  4. Add sifted dry ingredients and beat until smooth.
  5. Bake in waxed paper-lined 8” square pan at 350 degrees F. for 35 minutes.
