Sweet Potato Christmas Casserole

Ingredients:

  • 3 cups mashed sweet potatoes
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup melted butter
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1 cup pecans
  1. Mix the sweet potatoes, sugar, eggs, vanilla and butter in a bowl. 
  2. Pour in a casserole pan.
  3. Use a fork to combine the brown sugar with the flour. 
  4. Sprinkle crumbs over the pan of sweet potatoes.
  5. Layer the pecans over the entire pan for flavor and pizzazz.
  6. Bake at 350 degrees for 30 minutes.

Baked Potatoes and Broccoli

Ingredients

  • 8 potatoes
  • 1 tablespoon butter
  • Bag of frozen broccoli
  • 1 lb. bacon
  • 2 cups cheddar cheese
  1. Bake the potatoes in a pre-heated 350 degree oven until soft, approximately 1 hour.
  2. Fry the bacon until crisp. Crumble and set aside.
  3. Cut the potatoes lengthwise. Scoop out the centers.
  4. Mash the potatoes with butter and mix in the broccoli and bacon.
  5. Refill the potato skins and cover with cheddar cheese.
  6. Set back in oven until the cheese is melted.

Zucchini Dressing Christmas Casserole

  • Ingredients
  • 2 carrots
  • 1 zucchini
  • 1 onion
  • 2 boxes stuffing mix
  • 1 stick of butter
  • 2 cups sour cream
  • Cream of chicken soup
  1. Grate the carrots and zucchini.
  2. Dice the onion.
  3. Mix together 2 boxes of stuffing mix with the stick of melted butter.
  4. In a small bowl, mix the vegetables with 2 cups of sour cream and a can of cream of chicken soup.
  5. Place 1/2 the stuffing mix in a casserole pan. Then layer with the sour cream/veggie mix. Top with the rest of the stuffing.
  6. Bake at 350 degrees for 30 minutes.

Onion Kuchen Christmas Side Dish

Ingredients:

  • 2 onions
  • Butter
  • Refrigerator biscuits
  • 1 egg
  • 8 oz. of sour cream
  • Salt
  • Poppy seeds
  1. Slice onions into rings and saute in butter until soft.
  2. Press the biscuits in a single layer to cover the bottom of a round 8" cake pan.
  3. Place onions on top.
  4. Beat an egg with salt and sour cream. Spoon over top and then sprinkle with poppy seeds.
  5. Bake at 375 degrees for 30 minutes. Cut into wedges to serve.

Christmas Curry Spinach Tortellini

Ingredients:

  • 1 bag frozen cheese tortellini
  • 1 bag of frozen spinach.
  • 1 stick butter
  • 3 tablespoons flour
  • 2 cups half and half
  1. Boil the tortellini. Cook and drain the spinach.
  2. Melt a stick of butter in a sauce pan. Then whisk in 3 tablespoons of flour until it dissolves completely.
  3. Pour 2 cups of half and half, 2 tablespoons curry powder and the spinach. Mix with the hot tortellini and serve. Place in a crockpot to transport and keep warm.
