5 Easy Southern dinners

Enjoy both cooking and great taste with these 5 easy Southern dinners. The South and good food go hand in hand. While Southern women in the past spent hours cooking in the kitchen, we can thankfully have the same home-cooked taste in half the time with easy Southern dinner recipes.

1. Simple greens and peas soup

To make this Southern soup, you will need:

  • 1 can black eyed peas
  • 1 can of greens (turnip, mixed, collard, spinach, etc)
  • 2 cans tomatoes, diced (seasoned or unseasoned depending on taste)
  • 1 can chicken broth
  • 1/4 tsp. black pepper
  • 1 tsp. Cajun seasoning

Simply mix all of the ingredients in a crock pot slow cooker. Allow the mixture to cook on low heat for six hours.

2. Beef stew casserole

To make the casserole you will need:

  • 1 lb. of stew beef
  • 3 sliced potatoes
  • 1 bay leaf
  • Vegetable oil
  • 1 tsp. paprika
  • 1 1/2 cups small white onions
  • 1 tbsp. salt
  • 1 can tomato rice soup
  • 1/2 full soup can of water
  • 1 tbsp. Worcestershire sauce
  • 1/2 tsp. black pepper
  • 1 tsp. dried basil

Brown the beef in a skillet of oil and drain. Add in basil, paprika, pepper and salt. In a casserole dish, mix together soup, water, paprika and Worcestershire. Add in the potatoes, bay leaf, onions and beef. Cover the dish and cook in an oven preheated to 325 degrees for about two hours.

3. Sausage chili

To make this Southern chili you will need:

  • 3 lbs ground beef
  • 1 lb. hot sausage
  • 1 lb. smoked sausage
  • 2 cans crushed tomatoes
  • 2 cans tomato paste
  • 1 bag frozen whole kernel corn
  • 1 bag frozen bell peppers, diced
  • 1 bag frozen onions, diced
  • 4 jars apple and honey salsa
  • 1/4 cup basil and oregano seasoning
  • 1/4 cup classic seasoning
  • 1 lb. shredded white cheddar cheese
  • 3 cans dark red kidney beans
  • 2 can black beans
  • 1 jar regular BBQ sauce
  • 1/2 gallon of water

Brown the beef and sausage in a skillet and drain. Add the mixture and all ingredients except the cheese to a stock pot and cook on medium heat for 30 minutes. Add the cheese and simmer the mixture for one hour.

4. Cornpone pie

To make the pie you will need:

  • 1 1/4 lbs. ground beef
  • 1/2 lb. mild sausage
  • 1 medium onion, diced
  • 2 cans diced tomatoes
  • 2 packages yellow cornbread mix
  • 2 cups buttermilk
  • 2 tbsp. seasoning blend
  • 1 jar apple and honey salsa
  • 1 can dark red kidney beans

In a skillet, brown the beef and sausage. Add in the onion and simmer the mixture for 10 minutes. Add seasoning blend, drained beans, salsa and tomatoes. Simmer for five additional minutes. Mix cornbread mix and buttermilk. Poor over meat mixture and cook in oven at 425 degrees for 20 minutes.

5. Ham and bean soup

To make the soup you will need:

  • 8 cups water
  • 1 lb. great northern beans
  • 2 cups ham cubed
  • 1 ham hock
  • 1 chopped carrot
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup onion, chopped
  • 1 bay leaf
  • 1 stick chopped celery
  • 1 can tomato sauce

Boil water and beans for two minutes. Take from heat and cover for one hour. Add other ingredients and bring to boil. Simmer for two hours. Remove bay leaf and enjoy.
