Easy St. Patrick's Day side dish recipe for Colcannon:

  • 2-1/2 lbs. potatoes, peeled and cubed
  • 4 slices bacon
  • 1/2 small head cabbage, chopped
  • 1 large onion, chopped
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1/4 cup butter, melted
  1. Place potatoes in pot of water and bring to a boil. Boil for approximately fifteen to twenty minutes or until potatoes are tender.
  2. Over medium high heat, cook bacon in a frying pan until evenly browned. Drain fat, saving drippings. Set aside. Saute the cabbage and onion in the saved drippings.
  3. Drain the potatoes and mash. Mix in milk and add salt and pepper to taste.
  4. Mix in the bacon, cabbage, onions and melted butter.

Easy St. Patrick's Day side dish recipe for Corn O'Brien:

  • 2 slices bacon, cut into 1/2-inch pieces
  • 1/4 cup minced white onion
  • 2 tbsp. green bell pepper, chopped
  • 2 cups whole kernel corn, drained
  • 1 tbsp. chopped pimento peppers
  • Salt and pepper to taste
  1. Over medium high heat, cook bacon in a frying pan until evenly browned. Place the bacon on a plate lined with a paper towel.
  2. Stir the onion and bell pepper into the frying pan with the bacon grease. Cook about five minutes or until the onion is translucent.
  3. Add the corn, pimentos and bacon to the frying pan. Cook for approximately three to five minutes.
  4. Salt and pepper to taste.

Easy St. Patrick's Day side dish recipe for Glowing Mashed Potatoes:

  • 2 lbs. red-skin or golden potatoes, peeled, cut in large chunks
  • 1 (8.25 oz.) can sliced carrots, drained
  • 1 tbsp. butter or oil
  • 1/4 cup milk, half and half or cream
  • Salt and pepper to taste
  1. Boil a large pot of water. Add potatoes when water starts to boil. Cook until the potatoes are tender, about fifteen minutes.  
  2. Drain the water and return the potatoes to the pot.
  3. In a food processor, puree the carrots until smooth.
  4. Mash potatoes and mix in pureed carrots. Add remaining ingredients.

Easy St. Patrick's Day side dish recipe for Mashed Peas:

  • 2 tbsp. olive oil
  • 1 (16 oz.) package frozen peas
  • 1 bunch fresh mint leaves
  • 1 bunch green onions, chopped
  • 2 tbsp. butter
  • 2 tbsp. brown sugar
  • Salt and pepper to taste
  1. In a frying pan, heat the olive oil and stir in the frozen peas, mint leaves and green onions.
  2. Cook approximately seven to ten minutes, until peas are tender.
  3. Mash the peas in a bowl and stir in the remaining ingredients until the sugar has dissolved.

Easy St. Patrick's Day side dish recipe for Creamed Cabbage:

  • 4 slices bacon
  • 1/4 cup butter
  • 1 tbsp. all-purpose flour
  • 1 tsp. salt
  • 1 large head cabbage, cored and shredded
  • 1/2 cup sour cream
  1. Over medium high heat, cook bacon in a frying pan until evenly browned. Place the bacon on a plate lined with a paper towel.
  2. In the same frying pan, add the butter, flour and salt into the bacon drippings.
  3. Add the cabbage and cook until the cabbage is tender, about fifteen minutes.
  4. Add crumbled bacon pieces and sour cream to cabbage.
