French Toast with Strawberries
Ingredients:
- 2 eggs
- 1/4 cup milk
- 1 tablespoon sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon butter
- 6 slices bread
- 1 cup strawberries, sliced
- 1/4 cup powdered sugar
Directions:
- In a mixing bowl place the eggs and beat slightly. Add in the milk, sugar and cinnamon.
- Beat the French toast mixture well until light and fluffy. Melt the butter in a heavy bottom skillet.
- Dip each slice of bread in the French toast mixture, covering both sides. Place in the skillet and cook until browned on both sides.
- Sprinkle the French toast with powdered sugar. Top this very easy summer breakfast recipe with some sliced strawberries.
Scrambled Egg Burritos
Ingredients:
- 3 eggs, beaten slightly
- 2 flour tortillas
- 1 red pepper, chopped
- 1 green onion, chopped
- 1 small tomato, chopped
- 1/4 cup parsley, chopped
- 1/3 cup goat or mozzarella cheese, shredded
- Non-stick spray
- Salt and Pepper
Directions:
- Coat a skillet with the non-stick spray. Add in the veggies and cook slightly.
- Add in the eggs and begin to scramble. Add in the cheese, salt and pepper.
- Set the egg mixture aside to cool. Spray a grill with non-stick spray and heat.
- Take half of the egg mixture and place in the center of each tortilla. Wrap the tortilla all around the eggs.
- Place the burritos inside the grill and close the lid. Cook the burritos until browned on both sides.

Strawberry, Mango, Banana Parfaits
Ingredients:
- 1 cup of strawberries, sliced
- 2 large bananas, sliced
- 1 mango, chopped
- 2 pints yogurt
- Assorted nuts, chopped
Directions:
- Take three parfait glasses and line the bottom of the glass with some yogurt. Add in a mixture of the three fruits on top.
- On top of the fruit place a few nuts. Continue with this same routine until the entire yogurt and fruit is used up.
- Parfaits are definitely an easy breakfast recipe. Serve the parfaits with some fresh orange juice.
Belgian Waffles
Ingredients:
- 2 cups flour, sifted
- 2 eggs
- 2 teaspoons baking powder
- Pinch of salt
- 1 tablespoon sugar
- 1 tablespoon butter, melted
- 1 teaspoon vanilla extract
- 2 cups milk
- Non-stick spray
Directions:
- In a mixing bowl sift the flour, baking powder and salt. Set aside.
- In another mixing bowl put the milk, eggs and sugar. Beat on low speed with a mixer until the sugar is dissolved.
- Add in the vanilla and the melted butter. Gradually add in the flour mixture. Mix well.
- Spray the waffle iron with the non-stick spray. Heat the waffle iron as per directions.
- Add enough batter to cover the two thirds of the griddle plates. Close the lid and cook for two to three minutes on each side or until browned as desired.

Ingredients:
- 3 whole eggs separated
- Salt and Pepper

Directions:
- Take the egg yolks and add in the pepper. Beat with a hand mixer until light and frothy.
- Beat the egg whites and the salt together until stiff peaks form. Gently add the egg yolks to the egg whites.
- Spray a heavy bottom skillet with non-stick spray. Heat the pan and then add in the egg white mixture.
- Spread out slightly to all edges. Cook the omelet until the bottom is brown.
- With a heat resistant spatula loosen the edges. Place the omelet in a very hot 450 degree oven.
- Bake the omelet until browned on top and fallen slightly. Serve this very easy breakfast recipe on a plate with fresh cantaloupe.
