5 Easy Summer Meal Recipes
Get the grill out with these 5 easy summer meal recipes. These summer meals are sandwiches with very similar cooking instructions. You can mix and match the ingredients if you choose to very the recipes depending on your taste. These recipes are also a great alternative to the typical burger and hotdog that most people serve for backyard BBQs.
1. Chicken Summer Sandwich
Ingredients:
- Four slices onion
- ¼ cup mayonnaise
- 4 boneless and skinless chicken breast halves
- 4 kasier rolls
- 4 slices of Swiss cheese
- 4 slices pineapple
- Grill chicken, onion and pineapple over medium heat. Placing tinfoil over the grill for the onion and pineapple (and the chicken as well if you prefer) will keep it from sticking. Cook until everything is heated through. Make sure the chicken is full cooked and no longer pink.
- Split the kasier rolls. Spread the mayonnaise on both sides of all of the rolls.
- Place a chicken breast half on the bottom portion of each kasier roll. Top with onion, pineapple, cheese and the top kasier roll.
2. Beef Summer Sandwich
Ingredients:
- Four slices onion
- ¼ cup mayonnaise
- 1 LB. Boneless beef top round steak, thinly sliced
- 4 crusty round rolls
- 4 slices of Cheddar cheese
- 1 bell pepper quartered
- Grill beef, onion and bell pepper over medium heat. Placing tinfoil over the grill for the onion and bell pepper (and the beef as well if you prefer) will keep it from sticking. Cook until everything is heated through.
- Split the crusty rolls. Spread the mayonnaise on both sides of all of the rolls.
- Place ¼ of the beef on the bottom portion of each roll. Top with onion, bell pepper, cheese and the top of the roll.
3. Pork Summer Sandwich
Ingredients:
- Four slices onion
- ¼ cup honey dijon mustard
- 1 LB. Pork sausage
- 4 club rolls
- 4 slices of provolone cheese
- 1 apple thinly sliced
- Grill pork, onion and bell apple over medium heat. Placing tinfoil over the grill will prevent sticking and make it easier to cook the pork. Cook until everything is heated through.
- Split the club rolls. Spread the mustard on both sides of all of the rolls.
- Place ¼ of the pork on the bottom portion of each roll. Top with onion, apple, cheese and the top club roll.
4. Meatless Summer Sandwich
Ingredients:
- Four slices onion
- ¼ cup mayonnaise
- 4 meatless frozen patties (thawed unless otherwise directed by the manufacture cooking instructions)
- 4 onion rolls
- ¼ cup crumbled Feta cheese
- 1 small zucchini, sliced thinly
- 1 tomato, sliced thinly
- Grill patties, onion and zucchini over medium heat. Placing tinfoil over the grill for the onion and zucchini (and the patties as well if you prefer) will keep it from sticking. Cook until everything is heated through.
- Split the rolls. Spread the mayonnaise on both sides of all of the rolls.
- Place one patty on the bottom portion of each roll. Top with onion, zucchini, cheese and the top of the roll.
5. Black Bean Summer Pita
Ingredients:
- Four slices onion
- Can black beans (heated)
- ¼ cup mayonnaise
- 4 pita halves
- ¼ cup shredded Colby cheese
- 1 bell pepper quartered
- 1 small zucchini, sliced thinly
- 1 tomato, sliced thinly
- Grill veggies over medium heat. Placing tinfoil over the grill will keep them from sticking. Cook until everything is heated through.
- Spread the mayonnaise inside the pitas.
- Fill pitas with all ingredients.
