Basil Pesto Pasta is a classic pasta dish that is generally served cold. This perfect summer pasta recipe requires the following:

  • 1 pound dried pasta
  • 1 small clove garlic
  • 1/4 cup pine nuts
  • 3 cups fresh basil leaves
  • Salt and pepper to taste
  • 1 cup olive oil
  • 1/4 cup Parmesan cheese
  1. Cook the pasta according to the packaged directions
  2. Place the garlic, pine nuts, basil, salt and pepper into a food processor to combine.
  3. Drizzle olive oil into the feed tube while processing the ingredients.
  4. Transfer to a bowl and add Parmesan cheese.
  5. Drain the pasta and set aside to cool. 
  6. Spoon pesto over the pasta after it is cool and serve.

  • 1 pound pasta rigatoni or penne
  • 1 pint cherry tomatoes

  • 6 roma tomatoes, chopped

  • 6 cloves garlic, minced

  • 1/2 teaspoon garlic salt
  • Black pepper to taste
  1. Cook the pasta according to the packaged directions.
  2. Combine the tomatoes, cheese, basil, garlic, olive oil, garlic salt and black pepper.
  3. Set aside.
  4. Drain the pasta and transfer to a bowl.
  5. Toss the pasta with the mixture and serve.

Greek Orzo salad is a great summer pasta recipe that uses orzo pasta.  This summer pasta recipe is a blend of Greek flavors that requires:

  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pint grape tomatoes
  • 1 lemon
  • 1 cup feta cheese
  • 1/2 cup Kalamata olives
  • 1/2 cup mint leaves
  • 1/4 teaspoon black pepper
  1. Cook the orzo pasta according to the directions on the package.
  2. Heat oil on medium heat and add the grape tomatoes. 
  3. Cook for approximately 5 to 6 minutes until the skins split.
  4. Grate the lemon peel and squeeze juice.  Set aside.
  5. Drain the orzo pasta.
  6. Add the orzo pasta to the tomatoes in the skillet.
  7. Add lemon peel and juice, feta, olives, mint, and black pepper.
  8. Place in a large serving bowl and serve.
