5 Easy Thanksgiving Leftover Recipes
After spending so much time creating a fantastic Thanksgiving dinner, take it easy and use these five easy Thanksgiving leftover recipes. From egg rolls to wraps, there’s plenty of variety to help take care of all those holiday leftovers.
Turkey Egg rolls. This Thanksgiving leftover recipe uses several of your leftovers. Not only are these egg rolls delish when fresh, they can be frozen for later. Simply reheat them in a 300 degree oven for about 5 minutes, and you’ve got an instant New Year’s Eve appetizer!
- 1 package egg roll skins (20 count)
- 2 cups cooked, shredded turkey
- 1 cup stuffing
- 1 cup cooked, chopped green beans (or other vegetable)
- 1 cup shredded mozzarella or cheddar cheese
- Canola oil
- Place an egg roll skin in front of you.
- Place 2 tbsp. shredded turkey in the center of the egg roll skin. Place 1 tbsp. stuffing on top of the turkey. Place 1 tbsp. green beans on top of the stuffing. Sprinkle 1 tbsp. cheese over the filling.
- Fold over the bottom triangle of the egg roll to cover the filling then fold in the two side triangles. Dip your finger in water to moisten the edge of the last triangle.
- Roll up the egg roll, pressing the moistened triangle to seal. Continue filling egg roll skins until they are all filled.
- Heat oil in a skillet and cook the egg rolls over medium heat until they are lightly browned, turning them as needed. Drain on paper towels.
Turkey Pot Pie. This Thanksgiving leftover recipe is a classic and takes only 10 minutes prep time.
- 1 cup cubed leftover turkey
- 10 oz. can condensed cream of chicken soup
- ½ cup frozen mixed vegetables
- 1 egg
- ½ cup milk
- 1 cup Bisquick
- Preheat the oven to 400 degrees.
- Combine the first three ingredients and pour them in a 9-inch pie plate. Combine the next three ingredients and pour over the turkey mixture.
- Bake for 30 to 60 minutes, or until the top is golden brown.
Potato Patties. A potato leftover recipe is handy anytime of the year.
- 2 cups leftover mashed potatoes
- 1 cup minced onion
- 1 egg, beaten
- ¼ tsp. salt
- dash of pepper
- 3 tsp. olive oil
- Stir the potatoes, onion, egg, salt and pepper together.
- Heat the olive oil in a non-stick skillet over medium heat.
- Scoop out ¼ cup of the mixture at a time, dropping it into the hot oil. Use a spatula to flatten the patty to ½ inch thick.
- Cook the patty until it is golden brown, then flip and cook the other side. Drain on paper towels.
Turkey Ranch Wraps. This turkey leftover recipe is super easy and tasty.
- 4 large flour tortillas
- Sliced leftover turkey
- 1 sliced tomato
- 1 cup shredded carrot
- 1 cup shredded lettuce
- ½ cup shredded cheddar
- Ranch dressing
- Layer the ingredients on the tortillas.
- Roll up the wrap and serve with ranch dressing on the side for dipping.
Turkey Broccoli Bake
- 2 cups shredded leftover turkey
- 10 oz. frozen broccoli flowerets, cooked, or use leftovers
- 1 can cheddar cheese soup
- 1 cup cooked rice
- ½ cup sour cream
- ½ cup dry bread crumbs
- Preheat the oven to 350 degrees. In a two-quart baking dish, stir together the soup and sour cream.
- Add the turkey, broccoli and rice and stir. Bake uncovered for 30 minutes. Add the bread crumbs to the top and continue to bake until the bread crumbs are toasted.
