These five easy Easter vegan recipes are great tasting dishes that don’t cross the boundary of using animal products. So put on your man-apron, heat up the oven and get ready to cook.

Mushroom Confetti

This Easter vegan recipe is tasty enough for the main dish.

Ingredients you need:

  • 2 onions, chopped
  • 2 tbsp. olive oil
  • 2 cups wild rice and brown rice mix
  • 3 cups vegetable stock
  • 1 lb. mushrooms, chopped
  • 1 red pepper, chopped
  • ½ tsp. salt
  • dash pepper
  1. Pour olive oil into heavy skillet. Saute onions over medium heat until softened.
  2. Add rice mix and sauté, stirring for one minute.
  3. Add vegetable stock and simmer for 30 minutes.
  4. Add mushrooms, red pepper, salt and pepper and simmer for 10 more minutes.

Italian Veggies

Serve these vegetables as a side dish at your Easter meal.

Ingredients you will need:

  • 1 onion, cut in half and sliced thinly
  • 1 zucchini, peeled and sliced
  • 1 tbsp. olive oil
  • 1 15 oz. can Italian-style diced tomatoes
  • dash oregano
  1. Pour olive oil into heavy skillet. Fry the onion and zucchini over medium heat until lightly browned.
  2. Add diced tomatoes and a dash of oregano.
  3. Simmer for 10 minutes.

Sweet Potato Biscuits

These vegan-version biscuits are perfect for an Easter meal.

Ingredients you will need:

  • 2 cups cooked sweet potatoes
  • 2 cups all-purpose flour
  • 2 tsp. salt
  • ½ tsp. baking soda
  • 2 tbsp. baking powder
  • ½ cup canola oil
  1. Preheat oven to 375 degrees.
  2. Pour all ingredients into a large bowl. Mash with a potato masher until ingredients are well combined.
  3. Pat the dough into ¾-inch thick biscuits. Place on non-stick baking sheet.
  4. Bake for 15 minutes or until lightly browned.

Quick Veggies

This is a super-easy Easter vegan recipe.

Ingredients you will need:

  • 1 lb. frozen mixed vegetable blend
  • ¼ cup soy sauce
  1. Pour vegetables into heavy skillet. Heat to medium-high, stirring often.
  2. Saute vegetables, stirring constantly, until they are crisp-tender.
  3. Add soy sauce and continue to cook for one minute.

Choco-Nut Balls

Finish off your vegan Easter meal with this easy dessert.

To make this recipe you will need:

  • 1 cup creamy peanut butter
  • ½ cup maple syrup
  • 1 cup non-dairy chocolate chips
  • 1 cup chopped pecans
  1. Melt the syrup and chocolate chips in a heavy saucepan over medium heat.
  2. Stir in the peanut butter.
  3. Stir in the nuts.
  4. Pour mixture into a bowl. Place bowl in refrigerator for two hours.
  5. Remove from refrigerator. Pinch off portions of the mixture and roll into 1-inch balls.
