Eggplant Platter


  • 2 sliced eggplants (raw)
  • 1 can (8 oz.) diced tomato
  • 1 cup diced walnut or almonds (raw)
  • 1 tbsp. vegan margarine
  1. Melt vegan margarine in frying pan.
  2. Place sliced eggplant in frying pan. Cook eggplant until browned on both sides.
  3. Remove eggplant and plate. Place tomato and nuts on eggplant and serve.

Roasted Cinnamon Apple


  • 4 cups of wedged apples
  • 1 tbsp. vegan margarine
  • 1 tsp. cinnamon
  • 1 tbsp. roasted pumpkin seeds
  1. Add apples and cinnamon in a mixing bowl and mix.
  2. Heat frying pan and melt margarine. Fold the apples and cinnamon into the frying pan.
  3. Cook apples until soft on the outside, stirring continuously when cooking.
  4. Remove from pan into serving bowl. Layer with pumpkin seeds and serve.

Vegan Lettuce Wrap


  • 8 large lettuce leaf
  • 1 artichoke, diced
  • 1 carrot, shredded
  • 1 tsp. pepper and salt
  1. Keep lettuce leaves very chilled. Remove from refrigerator when ready to prepare. Season individual leaves.
  2. Place diced artichoke and shredded carrot (enough to fill but allow fold) into each open lettuce leaf.
  3. Carefully roll lettuce leaf and place a toothpick to hold in place.

Spicy Popcorn and Nuts


  • 1 cup popcorn kernels (raw)
  • 1 cup of almonds (raw)
  • 1 cup of cashews (raw)
  • 1 cup of pecans (roasted)
  • 1 tbsp. olive oil
  • 1 tsp. pepper and salt
  • 1 tsp. cumin and chipotle
  1. Place olive oil in saucepan. Place popcorn kernels in when pan is hot. Monitor popping and remove from flame when done.
  2. Place popcorn in a mixing bowl immediately. Season with salt, pepper, cumin and chipotle and mix well.
  3. Fold in nuts and mix again, serve in individual bowls.

Vegan Chilled Vegetable Tray


  • 4 cups of sliced cucumber
  • 4 cups of sliced celery
  • 4 cups of baby carrots
  • 4 cups  raisins
  • 1 tsp. pepper, salt, cinnamon and nutmeg
  • Vegan dressing (optional)
  1. Cover bottom of serving plate with raisins.
  2. Set sliced celery, cucumbers and baby carrots on top of raisins.
  3. Sprinkle seasoning over vegetables and serve.
