5 Easy Vegetarian Recipes For Christmas

These 5 easy vegetarian recipes for Christmas will help you accommodate dinner guests with a meatless diet. Many of these Christmas recipes are delicious enough that non-vegetarians will appreciate them gracing their plate.

1. To make Christmas tofu brown rice, you will need:

  • 2 cups brown rice
  • 1 cup tofu, chopped
  • 1 tbsp. each sage, thyme and parsley
  • Sea salt and pepper to taste
  • 2 tbsp. olive oil
  1. Cook brown rice according to package directions.
  2. Grill tofu in 1 tbsp. olive oil on stove.
  3. Combine herbs and remaining 1 tbsp. olive oil in a small bowl.
  4. Mix tofu and herbs. Letting tofu soak in herbs for ten to fifteen minutes.
  5. Mix tofu and rice together. Sprinkle with salt and pepper to taste.

Offer this vegetarian recipe permitting guests to serve themselves.

2. To make easy Christmas spinach, you will need:

  • 2 bunches spinach, rinsed with stems removed
  • 1 tsp. minced garlic
  • 1 tsp. each salt and pepper
  • 1/2 lemon juice
  • 2 tbsp. olive oil
  1. Place olive oil, garlic and salt and pepper in pan and heat over medium heat.
  2. Add spinach, stirring to ensure all pieces are coated with olive oil.
  3. Cook spinach until just wilted. Add lemon juice at cook for two more minutes.
  4. Serve the Christmas recipe while still warm.

3. To make vegetarian balsamic mushrooms, you will need:

  • 2 pints mixed mushrooms, stems removed
  • 1 cup balsamic vinegar
  • 1 tsp. sugar, if necessary
  1. Wash and slice mushrooms. Place mushrooms in pan on stovetop.
  2. Add balsamic vinegar.
  3. Heat vinegar and mushrooms over medium low heat until vinegar is reduced by half.
  4. Add sugar if desired.

Serve the vegetarian recipe as a side dish.

4. To make easy Christmas lentil soup, you will need:

  • 1 lb. of lentils
  • 1 cup red wine
  • 1 red onion, minced
  • 1 carrot, peeled and sliced
  • 1 tsp. salt and pepper
  • 4 cups low sodium vegetable broth
  • 1 tsp. garlic, sliced
  • 3 tbsp. olive oil
  1. Combine onion, carrot, garlic salt and pepper in deep pot on stove.  
  2. Add olive oil to pot and cook until fragrant.
  3. Add vegetable broth, bring to a boil.
  4. Add lentils and reduce heat to medium. Bring to a boil.
  5. Add red wine after boiling, bring soup to a simmer.
  6. Let simmer two to three hours, or until lentils are soft.
  7. Serve the easy vegetarian Christmas recipe while still warm.

5. To make thyme croissants, you will need:

  • 1 package ready to bake, refrigerated croissant dough
  • 4 tbsp. thyme
  • 2 tbsp. extra virgin olive oil
  1. Preheat oven to croissant package directions.
  2. Lay croissants on cutting board, slice small hole in back of each croissant.
  3. Mix olive oil and thyme. Let sit so that oil becomes infused with thyme, about ten to fifteen minutes.
  4. Place small amount of thyme mixture inside each croissant.
  5. Bake as directed by croissant package.
  6. Serve the Christmas recipe while still warm.
