1. St. Patrick's Day Shamrock Pizza
You will need:
- 6 English muffins
- jar of pesto
- 2 green peppers
- 8 oz. mozzarella cheese
- Cut the green peppers into twelve slices so they look like shamrocks.
- Split English muffins with a fork to make twelve halves.
- Spread pesto on each English muffin half.
- Sprinkle the mozzarella cheese on top of each English muffin half over the pesto.
- Place a slice of green pepper on each English muffin
- Place the English muffins on a baking sheet and place under the broiler until the cheese is bubbly and hot.
2. Vegetarian Pot of Gold Pudding
You will need:
- 1 oz. pistachio pudding mix
- 8 oz. can of chunked pineapple, undrained
- 16 oz. container of vanilla yogurt
- 1 cup frozen whipped topping, thawed
- Combine pistachio pudding mix, vanilla yogurt, and pineapple together in a large bowl. Mix until pistachio pudding mix appears to be free of lumps and the mixture is smooth. Fold whipped topping into the large bowl.
- Cover the bowl and refrigerate until chilled.
3. St. Patrick's Day Leaping Leprechaun Lime Pie
You will need:
- 14 oz can sweetened condensed milk
- 1/2 cup lime juice
- frozen whipped topping
- green food coloring
- prepared graham cracker or baked pie crust
- In a large bowl, combine the sweetened condensed milk, lime juice, and the frozen whipped topping. Add ten drops of the green food coloring, and stir until the color is consistent throughout.
- Pour the mixture into the graham cracker crust, and chill for at least three hours.
4. St. Patrick's Day Shamrock Treats
You will need:
- 7 oz. jar of marshmallow creme
- 5 cups of rice cereal
- 4 Tbsp. butter
- green food coloring
- In a large pot, melt the butter. Once the butter has melted, add the entire jar of marshmallow creme. Stir until the two are combined, and remove from the heat.
- Add food coloring to the pot, and stir until the marshmallow mixture is green.
- Add all of the rice cereal to the pot and stir until it is completely coated.
- Scoop the mixture into a 8" x 11" baking pan and press down with wax paper until the top is flat.
- Let the treats cool for at least an hour before cutting into squares and serving. Speed up the cooling time by placing the treats in the refrigerator.
5. St. Patrick's Green Vegetarian Salad
You will need:
- head of lettuce, torn in small pieces
- cucumber, chopped
- green pepper, chopped
- green tomato, chopped
- avocado
- green onions
- spinach, chopped
- green goddess dressing
- In a large bowl, toss everything except the dressing together until the vegetables are mixed thoroughly.
- Add the green goddess dressing, and toss the salad again until the dressing evenly coats the vegetables. Serve cold.
