Black Bean Soup

- 1 onion and 3 garlic cloves, diced
- 3 tbsp. olive oil
- 1 tsp. each smoked paprika and chili powder
- 4 (15 oz.) cans black beans, drained
- 2 tbsp. orange juice
- 1 cup tomato sauce
- 3 cups chicken or vegetable broth
- 4 (15 oz.) cans black beans, drained
- Sour cream, avocado and lime wedges for garnish
- Saute onion in oil over medium heat for about five minutes or until translucent.
- Add garlic, paprika and chili powder and saute until fragrant.
- Add beans, orange juice, tomato sauce and broth and bring to a boil, then simmer for fifteen minutes.
- Puree or mash beans to thicken soup if desired. Serve with garnish.
Potato and Kale Soup
To make this easy winter soup recipe, you will need:
- 1/2 lb. chorizo sausage, sliced
- 1 onion, diced
- 1 tbsp. olive oil
- 2 qt. chicken broth
- 8 potatoes, peeled and diced
- 6 cloves garlic, peeled and sliced
- 1 bunch kale, washed and sliced
- Salt and pepper to taste
- Brown the chorizo in a heavy pan and set aside to drain.
- Saute onion in olive oil until translucent.
- Add all other ingredients except kale and simmer until potatoes are done, about fifteen minutes.
- Add kale and simmer fifteen minutes, then add chorizo.
Vegetable Soup
To make this easy winter soup recipe, you will need:
- 5 cups vegetable or chicken stock
- 1/2 cup pearl barley
- 2 each of leeks, carrots and celery stalks, washed and sliced
- 1 parsnip, peeled and diced
- 1/4 cup white wine
- 1 tbsp. tomato paste
- 2 bay leaves
- 2 tbsp. chopped parsley
- Salt and pepper to taste
- Simmer the pearl barley in the stock until it starts to get tender, about ten minutes.
- Add the rest of the ingredients.
- Simmer about 25 minutes until the barley and vegetables are soft.
Squash Soup
To make this easy winter soup recipe, you will need:
- 2 tbsp. butter
- 1 tsp. each fresh sage, marjoram and oregano, chopped
- 4 cups butternut squash, peeled and diced
- 1/4 tsp. each cinnamon and cloves
- Salt and pepper to taste
- 3 cups chicken stock
- 1 roasted poblano pepper, peeled and diced
- 1 tsp. sugar
- Sour cream for garnish
- Cook the herbs in the butter over low heat until the butter browns. Strain out the herbs and reserve.
- Add squash, cinnamon, cloves, salt and pepper to the butter and saute until squash softens, about ten minutes.
- Add stock, poblano and sugar and simmer until the squash breaks down into a thick soup. Serve with sour cream.
Crab Soup
To make this easy winter soup recipe, you will need:
- 1 cup frozen crab meat
- 1 tbsp. butter
- 1-1/2 tbsp. flour
- 3 hard-boiled eggs, mashed
- 2 tsp. lemon zest
- 1 qt. milk
- 1/2 cup each cream and sherry
- Worcestershire sauce, salt and pepper to taste
- Combine butter, flour, eggs, lemon zest and crab meat.
- Bring milk to a boil and add to egg mixture.
- Add cream, sherry, Worcestershire sauce, salt and pepper and simmer until heated through.
