If you're a vegetarian who is looking to eat good this holiday season, check out this list of 5 fast vegetarian recipes for Christmas. Just because you're a vegetarian doesn't mean that you can't enjoy the holidays along with everyone else. Vegetarian dishes during the holidays can be just as delicious and fast as non-vegetarian's.

Vegetarian Onion Dip

Ingredients:

  • 1/3 cup of onion soup mix
  • 2 cups of soy sour cream
  • Mixing bowl
  1. Mix onion soup mix and soy sour cream in a bowl.
  2. Cover and chill for 30 minutes to 2 hours, depending on your taste.

Holiday Spinach Salad

Ingredients:

  • 1 cup of chopped spinach
  • 1/4 pound of crumbled feta cheese
  • 1/4 cup of chopped red onion
  • 1/2 cup of chopped pine nuts
  • ground pepper
  • 1/2 teaspoon of basil
  • 1/4 cup of olive oil
  • 1/4 cup of balsamic vinegar
  • dried cranberry
  • salad bowl
  1. Mix together in a bowl. Add ground pepper and dried cranberry to taste.

Vegetarian Gravy

Ingredients:

  • 1 ounce of onion soup mix
  • 1 can of mushroom soup
  • 1 can of evaporated milk
  • 1 bay leaf
  • ground pepper
  • white or red wine
  1. Mix the onion soup mix with the can of mushroom soup.
  2. Stir in the evaporated milk.
  3. Stir in a splash of your favorite wine.
  4. Add the bay leaf and ground pepper to taste.

Spinach and Cranberry Salad

Ingredients:

  • 1 tablespoon of butter
  • 1/4 cup of almonds
  • 1 cup of cranberries
  • 1 pound of spinach
  • 2 table spoons of sesame seeds
  • 1 teaspoon of poppy seeds
  • 2 teaspoons of minced onions
  • 1/4 cup of paprika
  • 1/2 cup of vegetable oil
  • 1/4 cup of white wine vinegar
  • 1/4 cup of cedar vinegar
  1. Melt butter in a sauce pan.
  2. Mix in, and lightly toast, almonds. Remove pan from stove.
  3. Mix in cranberries and spinach.
  4. Whisk together with the paprika, sesame and poppy seeds, vinegar and vegetable oil.
  5. Toss before serving.

Squash Casserole

Ingredients:

  • 1 can of mushroom soup
  • 1 cup of chopped zucchini squash
  • 1 cup of chopped butternut squash
  • 1 cup of yellow squash
  • Sea salt
  • Italian seasoning
  • Falafel mix
  • 2 quart baking dish
  • Extra virgin olive oil
  1. Preheat oven to 350 degrees.
  2. Mix the mushroom soup with the chopped squash in a bowl. Add sea salt and Italian seasoning to taste.
  3. Prepare the falafel mix.
  4. Coat the baking dish with extra virgin olive oil.
  5. Layer the vegetable mix.
  6. Pour the mushroom soup and falafel on top.
  7. Bake for 30 minutes at 350 degrees.
