Healthy Autumn Lentil Recipe
- 2 cups lentils
- 2 medium tomatoes
- 2 large carrots, chopped
- 1 small onion, chopped
- 8 cups vegetable stock or water
- 1 tsp. lemon juice
- 1 tsp. cumin, ground
- 1 tsp. fresh mint leaves
- sea salt and pepper
- Cook the lentils in the vegetable stock or water over medium heat until soft. (About 25-30 minutes.)
- Add the rest of the ingredients, and cook 15 more minutes.
- Add salt and pepper.
- Serve hot.
Healthy Autumn Yams With Ginger Recipe
- 3 yams, peeled and sliced
- 1 tsp. fresh ginger, grated
- 1 tbs. lemon juice
- ½ tsp. curry powder
- sea salt
- Bake the yams in a baking pan for one hour at 400 F or until soft.
- Remove the yams from the oven, and let them cool.
- After they cool, puree them with a potato masher in a medium bowl.
- Add the rest of the ingredients, and mix well.
- Serve warm.
Healthy Autumn Black-Eyed Pea Recipe
- 2 cups black-eyed peas, cooked
- 1 small onion, finely sliced
- 1 small tomato, cut into small pieces
- 1 bell pepper, chopped
- ¼ cup wine vinegar
- 2 tbs. olive oil
- ¼ cup fresh cilantro, chopped
- sea salt and pepper
- Mix all the ingredients together in a serving bowl.
- Serve hot or cold.

Healthy Fresh Corn Salad Recipe
- 3 cups fresh corn kernels (about 4 ears of corn).
- juice of 1 lemon
- 1 large tomato, cut into small pieces
- 1 cup bell pepper, cut into small pieces
- ½ cup onion, finely sliced
- 1 tbs. virgin olive oil
- sea salt and pepper
- Combine all the ingredients in a medium bowl, toss well.
- Refrigerate for one hour.
- Serve cold.
Healthy Pear, Apple and Ginger Smoothie Recipe
- 1 ripe pear, cored
- 1 small apple, cored
- ¼ tsp. fresh ginger, grated
- 2 tbs. honey
- ½ cup skim milk
- ½ cup crushed ice
- Mix all the ingredients in a blender, and puree until smooth.
- Serve in chilled glasses.
