To make Spanish chicken, you will need:
- 2 teaspoons olive oil
- 8 tomatoes, peeled, seeded and chunked

- 1 tablespoon smoked Spanish paprika
- 2 bay leaves

- 3 teaspoon olive oil
- 2 tablespoons fresh rosemary leaves, stripped from the branch
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh sage leaves, chopped
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup water
- Rub the chicken with olive oil. Grease the slow cooker. Place the chicken in it.
- Season the chicken with salt and pepper. Sprinkle the herbs on top of the chicken.
- Cover and cook on low for eight to ten hours. Add up to one half cup water as needed during cooking.

- 1 6-ounce can tomato paste
- 1/2 cup chicken broth

- 1 onion, sliced
- 2 green bell peppers, chopped
- 1/8 teaspoon pepper
- 1/2 teaspoon salt
- Season the chicken with salt and pepper. Place the chicken in the slow cooker. Add the other ingredients on top of the chicken.
- Cover the slow cooker and cook for eight hours on low. Taste to correct seasonings.
