Low Calorie Chicken Cacciatore

Ingredients:

  • 3 skinless boneless chicken breasts
  • 1 24-ounce jar of tomato and basil marinara sauce
  • 2 green bell peppers, seeded and cut into cubes
  • 8-ounces small white mushrooms, chopped
  • 1 medium white onion, finely chopped
  • 3 garlic cloves, minced

Directions:

  1. Cut chicken breasts in half and place in the crock pot.
  2. Cover chicken breasts with remaining ingredients.
  3. Cover with lid and cook on Low setting for approximately eight hours.
  4. Approximate calories per serving: 200; Serves six.

Crock Pot Vegetable Beef Soup

Ingredients:

  • 6 ounces Fusilli pasta, dry
  • 1 pound ground beef
  • 3 garlic cloves, minced
  • 1 small white onion, finely chopped
  • 1 green bell pepper, diced
  • 3 celery stalks, chopped
  • 1 30-ounce can Italian stewed tomatoes, drained
  • 1 15-ounce can mixed vegetables, drained
  • 4 cups beef broth

  • ¼ teaspoon salt

  3. Add remaining ingredients except the pasta to the crock pot.

Ingredients:

  • 1 pound dark meat chicken, thighs or wings, boneless and skinless, cut into ½-inch pieces
  • 4 ounces andouille sausage, cooked and cut into ½-inch pieces
  • 1 15-ounce can crushed tomatoes
  • 2 cups fresh corn kernels (or frozen/thawed)
  • 1 cup fresh okra (or frozen/thawed) 
  • 1 medium white onion, finely chopped
  • 1 medium green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon, salt
  • 1 teaspoon Cajun seasoning
  • 4 cups chicken broth

Directions:

  1. Place chicken and sausage into crock pot.
  2. Cover chicken breasts with remaining ingredients.
  3. Cover with lid and cook on Low setting for approximately eight hours.
  4. Approximate calories per serving: 220; Serves six.

Beef Carnitas ala Crock Pot 

Ingredients:

  • 2 pounds lean beef stew meat, cut into ½-inch cubes
  • 1 cup medium salsa
  • 2 tablespoons chipotle peppers in adobo sauce, chopped

  • ½ teaspoon ground black pepper
  • 1 cup beef broth

Directions:

  1. In a mixing bowl, combine beef, bread crumbs, parsley, garlic, onions, and egg, stirring thoroughly.
