Try these 5 low calorie vegetarian recipes for Christmas for an unforgettable holiday. Dieting is toughest during the holidays when everyone around you is shoveling down snacks. But with these low fat, low calorie recipes, it will be a breeze to keep off the pounds this holiday season.

1. Vegetarian Seitan Roast

You will need:

  • 1 pound seitan (purchase at your health food store)
  • 2 cups sliced mushrooms
  • 2 cup sliced onions
  • 1 1/3 ounces tofu scrambler
  • 4 cups water
  • 1 teaspoon basil
  • 1 teaspoon sage
  1. Slice seitan into 1/2" slices and put in a large pot.
  2. Layer mushrooms and onions on top.
  3. In a bowl, combine the tofu, water, basil and sage.
  4. Pour over seitan & vegetables.
  5. Bring to a boil & simmer gently for 30 minutes, until thickened.

2. Low Calorie Vegetarian Creamy Yams

You will need:

  • 3 cups mashed yams
  • 1 cup applesauce
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup soy milk
  1. Mix all ingredients well and serve.

3.  Vegetarian Stuffing.

You will need:

  • 1 cup vegetable broth
  • 3 tablespoons poultry seasoning
  • 1 chopped onion
  • 2 stalks chopped celery
  • 1 loaf bread cut into cubes
  • 1 cup water
  1. Saute the vegetables in a small amount of the vegetable broth until tender.
  2. Add seasoning and simmer a few minutes.
  3. Fold in bread cubes until mixed well.

4. Zesty Cranberry Sauce

You will need:

  • 2 cups fresh cranberries
  • 1 can orange juice concentrate
  • 2 chopped pears
  • 1 chopped apple
  • 1 teaspoon cinnamon
  • 1 teaspoon grated orange rind
  • 1 cup raw sugar
  1. Mix all ingredients except sugar in a saucepan. Simmer over medium heat 10 minutes.
  2. Add sugar and mix thoroughly.
  3. Serve hot or cold.

5. Low Calorie Vegetarian Ambrosia

You will need:

  • 1 can cubed pineapple
  • 1 can tangerine
  • 1/4 cup shredded coconut
  • 1/2 cup chopped walnuts or pecans
  • 1 small container cool whip
  1. Mix all ingredients in a bowl and chill before serving.
