5 Pumpkin Appetizer Recipes For Thanksgiving

Plan a great holiday get-together with these 5 pumpkin appetizer recipes for Thanksgiving. Think of pumpkin and Thanksgiving and you think of pie, but you can do more with pumpkin than just dessert.  Here are pumpkin appetizer recipes for Thanksgiving that are sure to be welcome at any feast.

 Pumpkin "Meatballs"

 What you'll need: 

  • 2 lbs. pumpkin
  • 1 tsp. salt
  • 3 eggs
  • 1/2 cup bread crumbs
  • 1/2 cup mint
  • 4 garlic cloves, chopped
  • 1 onion, chopped
  • 1 tbsp. pepper
  •  Oil for frying
  1. Grind pumpkin and add salt. Add all the remaining ingredients and mix well. Form into balls and fry until golden brown.

Pumpkin Hummus

  • 1 tbsp. tahini
  • 2 tsp. vegetable oil
  • 3 to 4 tbsp. water
  • 1 tsp. ground cumin
  • 3/4 tsp. salt
  • 1/4 tsp. ground cayenne pepper
  • 1 large can garbanzo beans
  • 1 large can pumpkin puree (about 2 cups)
  • 1 garlic clove, minced
  1.  Combine all the ingredients in a food processor and puree until smooth. Serve with pita chips or veggies.

Pumpkin Dip

  • 2 cups pumpkin puree
  • 1 cup brown sugar
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1 package cream cheese
  1. Mix puree and cream cheese together in a bowl. Add remaining ingredients and beat together until smooth. Refrigerate overnight. Serve with crackers.

Pumpkin Soup

  • 1/2 cup chopped onion
  • 3 tbsp. butter
  • 2 cups cooked pumpkin
  • 1 tsp. salt
  • 1 tbsp. sugar
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ground pepper
  • 3 cups chicken broth
  • 1/2 cup half and half
  1. Heat butter in a saucepan and add pumpkin and onions. Mix together, then add sugar, salt, nutmeg and pepper. 
  2. Stir in chicken broth and heat without bringing to a boil. After it is heated thoroughly, add cream and remove from heat. Serve immediately.

Pumpkin Fondue

  • 4 lbs. whole pumpkin
  • 2 tbsp. vegetable oil
  • 2 cloves garlic
  • 4 slices white bread (crumbed)
  • 6 oz. Swiss cheese chopped
  • 2 oz. mozzarella, shredded
  • 1 pint half and half
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. freshly grated nutmeg
  • Bread for dipping 
  1. Preheat oven to 350 degrees. Remove top of pumpkin and scoop out insides. Mix oil and garlic and rub into the interior of the pumpkin.  
  2. Put layers of bread crumbs and cheese into the pumpkin, alternating the layers. Mix half and half, salt, pepper and nutmeg and pour over the layers.  Replace pumpkin top and bake two hours. Serve immediately.
