Refreshing Fruit Salad

Ingredients:

  • 1 cup chopped watermelon
  • 1 cup diced pineapple
  • 1 cup red grapes
  • 1 cup chopped strawberries
  • 1 cup melon cubes
  1. In a large bowl mix all ingredients and stir.
  2. Serve as soon as you're done or place in the refrigerator and chill.

 

Simple Hot Ham and Swiss Wrap

Ingredients:

  • 1 whole grain tortilla
  • 3 slices of Swiss cheese
  • sliced ham
  • 1 tablespoon Dijon mustard
  1. Lay tortilla flat.
  2. Spread Dijon mustard onto tortilla.
  3. Place ham and Swiss onto tortilla.
  4. Roll tortilla into wrap and heat in microwave for twenty seconds.

 

Peanut Butter Celery Logs

Ingredients:

  • Celery sticks, cleaned and cut.
  • 1/2 cup peanut butter
  • 1/2 cup raisins
  1. Fill celery sticks with peanut butter.
  2. Top with raisins and serve.

 

Energizing Greek Parfait

Ingredients:

  • 1 cup plain or vanilla Greek yogurt
  • 1/3 strawberries
  • 1/3 blueberries
  • 1/3 blackberries
  • 1/2 granola
  1. In a parfait glass, start the first layer with granola.
  2. Continue to layer yogurt and fruit.
  3. Top off parfait off with another layer of granola.

 

Frozen Fruit Pops

Ingredients:

  • 2 cups pineapple juice
  • 1 cup chopped strawberries
  • 1 cup diced mangos
  • 12 eight-ounce paper cups
  • 12 wooden craft sticks
  1. In a large bowl mix pineapple juice and fruit together.
  2. Stir all juice mixture.
  3. Using a large spoon, spoon mixture into paper cups.
  4. Stick wooden craft sticks into the paper cups filled with the mixture.
  5. Place in the freezers and let them freeze overnight.
  6. Freeze pops will be ready to serve the next day.
  7. Tear the paper cups off of the pops or pull the pops out of the cups.
