5 Slow Cooker Vegetarian Recipes

Red Sauerkraut

To make slow cooker red sauerkraut, you will need:

  • 1 small red cabbage
  • 1 medium yellow onion
  • 1 cup hot water
  • 2 tsp. salt
  • 1/2 tsp. soy sauce
  • 3 tbsp. butter
  • 1-1/2 tbsp. sugar
  • 1 cup vinegar
  1. Core and slice the red cabbage, then peel and slice the onion.
  2. Combine all ingredients in slow cooker.
  3. Cook on high three to four hours or low six to eight hours.

Candied Sweet Potatoes

To make slow cooker candied sweet potatoes, you will need:

  • 4 lbs. sweet potatoes
  • 1/2 cup each chopped pecans and unsweetened coconut flakes
  • 1/3 cup each white sugar and packed brown sugar
  • 1/4 cup melted butter
  • 1/2 tsp. each cinnamon and vanilla extract
  • 1/4 tsp. salt
  1. Peel and cube sweet potatoes.
  2. Combine all ingredients in a five-quart slow cooker.
  3. Cook on low for four hours or until the potatoes are soft.

Vegetarian Curry

To make vegetarian curry, you will need:

  • 3 cups cauliflower florets
  • 1 cup cut green beans, fresh or frozen
  • 15-oz. can chickpeas, rinsed and drained
  • 1 cup sliced carrot
  • 1/2 cup chopped onion
  • 2 cups  vegetable broth
  • 2 cups coconut milk
  • 3 tsp. curry powder
  • 1/4 cup fresh basil leaves, shredded
  1. Combine all ingredients except basil in a four-quart slow cooker.
  2. Cook on low for five to six hours or high for two and a half to three hours.
  3. Stir in basil.

Vegetarian Minestrone

To make vegetarian minestrone, you will need:

  • 1 (15-oz.) can each white beans and kidney beans, drained and rinsed
  • 1 (28-oz.) can diced tomatoes
  • 6 carrots, peeled and chopped
  • 4 celery stalks, chopped
  • 1 onion, chopped
  • 2 quarts chicken broth
  • 6 sprigs fresh thyme
  • 1/2 tsp. dried sage
  • 2 bay leaves
  • Salt and pepper
  • 2 cups ditalini pasta
  1. Combine all ingredients except pasta in slow cooker.
  2. Cook on low for seven to eight hours.
  3. Cook and drain pasta, then stir into cooked soup.

Bean Cassoulet

To make vegetarian bean cassoulet, you will need:

  • 1 (15-oz.) can vegetarian baked beans
  • 1 (15-oz.) can each butter beans, kidney beans and stewed tomatoes, drained and rinsed
  • 1 (9-oz.) package frozen lima beans, thawed and drained
  • 1 can (15-oz.) Progresso red kidney beans, drained, rinsed
  • 2 medium carrots, sliced
  • 1 large onion, diced
  • 1/2 tsp. garlic salt
  • 1/8 tsp. each crushed fennel seed and cayenne pepper
  1. Combine all ingredients in three- to four-quart slow cooker.
  2. Cook on low for seven to eight hours.
  3. Serve as a meal or side dish.
