1. Cheddar Spinach Appetizer Squares

  • 1 can of refrigerated crescent rolls
  • 1 cup cheddar cheese, shredded
  • 1/4 cup flour
  • 1/4 cup grated parmesan cheese
  • 1 1/2 cups milk
  • 1 package frozen chopped spinach, thawed and well drained
  • 3 eggs, beaten
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp nutmeg
  • 1/8 tsp onion powder
  1. Heat oven to 350 degrees
  2. Unroll crescent rolls and press into bottom of a 13X9 baking pan.
  3. Combine all the rest of ingredients in a bowl, starting with the cheese and ending with onion powder.
  4. Pour onto crust
  5. Bake for 25 to 35 minutes.
  6. Cut into squares.

2. Spinach and Bacon Appetizers

  • 1 package large tortillas
  • 1/2 pound bacon, cooked and crumbled
  • 8 oz. soft cream cheese
  • 20 oz frozen chopped spinach, thawed and drained
  • 1/2 cup mayonnaise
  • 1/2 cup chopped green onions
  1. Mix cream cheese, spinach, mayo, bacon, and green onion.
  2. Spread a thin layer of mixture on each tortilla. Leave 1 inch of the edge empty.
  3. Roll tortillas and wrap individually in plastic wrap. Refrigerate for 1 hour.
  4. Heat oven to 375 degrees.

  • 10 oz package frozen spinach
  • 1 cup seasoned bread crumbs

  • 4 tbsp margarine, melted
  1. Preheat oven to 350.
  2. Cook spinach according to package directions. Drain well.
  3. Combine spinach with rest of ingredients.
  4. Roll into small balls.
  5. Bake for 30 minutes.

4. Spinach and Mascarpone Dip Appetizer

  • 1 onion, minced
  • 2 tbsp olive oil
  • 16 oz frozen chopped spinach
  • 8 oz mascarpone cheese
  • 1/2 tsp salt and 1/2 tsp pepper
  • 1/4 tsp cayenne pepper
  • 1/2 cup parmesan cheese
  1. Saute onion in olive oil on medium heat until translucent.
  2. Add frozen spinach and heat until hot, but still green.
  3. Add rest of ingredients.
  4. Pour into small casserole dish.
  5. Bake for 30 minutes.
  6. Serve with chips.

5. Spinach Spirals Appetizer

  • 3 package cream cheese
  • 1 package frozen chopped spinach, thawed and drained
  • 2 cans chopped green chiles
  • 1/4 cup chopped green onions
  • 6 oz chopped ham
  • salt, pepper, and garlic to taste
  • 1 package tortillas
  1. Blend all ingredients except tortillas.
  2. Spread a thick layer on tortillas and roll up.
  3. Chill until they have set.
  4. Slice into 1 inch round pinwheels.
