5 Spring Salad Recipes

The best Spring salad recipes use the freshest, greenest salad ingredients. Spring is a great time to go foraging for new edible growth, such as looking for Fiddlehead ferns down by a local waterway. Fiddlehead Fern Greens Spring Salad


  • Fiddlehead ferns (You can find these tightly curled ferns by running water, such as a stream or lakeside, or at any better grocery store.)
  • Romaine lettuce leaves
  • Balsamic vinegar and good quality olive oil
  1. Wash Fiddlehead ferns well in running water.   Dry well on paper towels.
  2. Cut romaine lettuce leaves into small, bite sized pieces. 
  3. Combine the Fiddlehead ferns and romaine lettuce along with the spring onions. Drizzle lightly with balsamic vinegar and olive oil and serve on a pretty salad plate.  

Dandelion Leaf Salad


  • Fresh Dandelion leaves (Smaller leaves are less bitter than the larger leaves.)
  • Spring onions
  • Dried cranberries
  • Balsamic vinegar and olive oil
  1. Prepare the Dandelion leaves by washing and drying well. Since you might be picking them from your yard, select a spot where no pets are allowed. 
  2. Cut spring onions into small pieces and combine with the Dandelion leaves in a large bowl.
  3. Add in dried cranberries and toss well with a dash of balsamic vinegar and olive oil. Serve with a slice of fresh hot bread.

Goat Cheese Spring Salad

  • Goat cheese
  • Dried cranberries
  • Caesar salad dressing
  • Spring greens
  1. Wash and dry the fresh spring greens (available at any good quality grocery store). 
  2. Add small pieces of goat cheese and dried cranberries and toss well. 
  3. Dress with Caesar salad dressing and toss.

Asparagus Spring Salad


  • Green asparagus
  • Water chestnuts
  • Balsamic vinegar and olive oil
  1. Snap off the bottoms from asparagus and microwave for just three minutes on high. Immediately immerse in cold water.
  2. Cut asparagus in 1/2 inch pieces. Dice water chestnuts and combine with asparagus. 
  3. Drizzle with balsamic vinegar and olive oil.

Spring Salad with Fresh Peas


  • Spring greens
  • Fresh peas, shelled and microwaved for two minutes
  • Bottled salad dressing of your choice
  • Slivered almonds
  1. Combine peas and almonds. 
  2. Place peas and almonds on top of spring greens. Add you favorite salad dressing and enjoy!
