5 St. Patrick's Day Desserts

Here are 5 St. Patrick's Day desserts. St. Patrick's Day is celebrated with good people, good food and good drink. Scrumptious meals of Corned beef and cabbage, Irish soda bread, potato soup and green beer highlight the day. But once the main meal is consumed, people are always ready for a delicious St. Patrick Day dessert.

1. Glazed Irish Tea Cake

Ingredients:

  • 2-large eggs
  • 1 3/4-cups flour
  • 1-cup sugar
  • 1-cup Dried currants
  • 3/4-cup unsalted butter at room temperature
  • 1/2-cup confectioner sugar, sifted
  • 2/3-cup Buttermilk
  • 3-ounces Cream cheese at room temperature
  • 2-teaspoons vanilla
  • 2-teaspoons fresh lemon juice
  • 1 1/4-teaspoon baking powder
  • 1/4-teaspoon salt
  1. Preheat oven to 325 F. Spray a 9-inch loaf pan with baking spray, or liberally grease, sprinkle with flour and discard excess flour.
  2. Place butter, vanilla and sugar in a large mixing bowl using a blender to cream the ingredients. Add eggs then cream cheese. Beat until well mixed.
  3. Place currants in a separate bowl. In a medium-sized bowl, combine flour, salt, baking powder and stir. Add 1/4-cup of flour mixture to the currants; stir well until coated. Add currants, flour mixture and buttermilk to the batter in the large bowl. Mix well until creamy and smooth.
  4. Pour batter into loaf pan and bake until browned for one hour and 35 minutes, or until it passes the "toothpick" test.
  5. Let the cake sit for ten minutes, before removing it from the pan.
  6. Don't be alarmed; the cake will crack on top.
  7. Prepare glaze by mixing confectioner's sugar and lemon juice in a small bowl. Mix well until smooth and spread glaze on cake while it's still warm.

2. Irish Coffee Pie

Ingredients:

  • 1-8 inch baked  pastry or pie shell
  • 1 3.5-ounce package vanilla whipped dessert mix
  • 1/2-cup cold milk
  • 1/2-cup whipping cream
  • 1/3-cup water
  • 3-tablespoons Irish whiskey
  • 2-teaspoons instant coffee
  1. Combine instant coffee, whipped dessert mix and milk in a medium-mixing bowl. Beat on high for one minute.
  2. Blend in Irish whiskey and water. Beat for two minutes on high, or until fluffy.
  3. Whip the whipping cream and slowly fold into the filling. Transfer filling to baked shell and refrigerate for three to four hours.

3. Irish Jig Dessert

Ingredients:

  • 2-cups heavy whipping cream
  • 1-cup coconut macaroons
  • 2-tablespoons Irish whiskey
  • 2-tablespoons sugar
  • 1-teaspoon confectioners’ sugar
  • 1/2-teaspoon vanilla extract
  1. Prepare ahead by chilling mixing bowl, beater attachments and whipping cream.
  2. Crush macaroons and keep in a sealed container.
  3. In the chilled bowl, mix the remaining ingredients and beat well until stiff peaks are formed.
  4. Slowly fold in 3/4-cup of the smashed macaroons. Mix well.
  5. Fill six to eight dessert glasses with dessert and shake additional macaroons pieces on top.

4. Bailey's Chocolate Mousse Pie

Ingredients:

  • 1-Ready made pie crust (graham/chocolate)
  • 1-envelope unflavored gelatin
  • 8-12 fresh strawberries (optional), sliced in half
  • 2-cups frozen whipped topping (semi-thawed)
  • 3/4-cup milk
  • 3/4-cup Bailey's Irish Cream
  • 6-ounces Semisweet chocolate chips
  • 1-teaspoon vanilla  
  1. In a medium saucepan, add milk and unflavored gelatin.
  2. Stir this mixture over low heat for five minutes or until gelatin completely dissolves. 
  3. Stir in vanilla and add chocolate chips. Consistently stir until chocolate is melted.
  4. Remove from heat and let sit for five minutes. Continue to occasionally stir and add the Irish cream after the five minutes.
  5. Slowly fold in whipped topping and place mixture into pie crust.
  6. Garnish with additional whipped topping or real whipped cream and fresh sliced strawberries.
  7. Chill for four to five hours prior to serving.

5. Pistachio Pudding

There has to be at least one "green item" on the menu for a St. Patrick's Day celebration. This delicious Pistachio pudding, is not only green, it’s also low-carb. So there's no excuse to pass on dessert!

Ingredients:

  • 1 20-ounce can crushed pineapple
  • 9-ounces Cool Whip
  • 3 3/4-ounce package pistachio pudding
  • 1-cup mini marshmallows
  1. 1-cup shelled, finely chopped pistachio nuts
  2. Combine pineapple, Cool whip, marshmallows, nuts and mix well.
  3. Add pudding mix and blend until smooth.
  4. Place pudding in dessert glasses. Serve at room temperature or chilled.
  5. Refrigerate unused portions.
