5 Summer Dinner Recipes

These five summer dinner recipes are designed for simplicity and fun. Even weeknight suppers can be fun and easy with these great meal ideas. Enjoy these great summer dinners with a glass of cold lemonade or fruity summer blush wine.

To make hamburgers you will need:

  • two pounds ground chuck
  • envelope onion soup mix
  • two eggs
  • two teaspoons Mrs. Dash seasoning
  • salt and pepper
  1. Ingredients. Combine the ground chuck, soup mix, eggs, and seasoning.
  2. Mix. Use your hands to thoroughly mix the ingredients.
  3. Make your patties. Shape palm-sized ball of meat into a flat patty. Be sure to work the patty from the inside out to ensure uniform thickness. 
  4. Spice it up. Season the patties on both sides with salt and pepper before grilling.
  5. Man the grill. Place patties over a hot grill and cook thoroughly. A meat thermometer should read 160 degrees Fahrenheit before you remove the burgers from the grill.
  6. Place the hamburger buns on the grill to toast right before serving. Serve and enjoy!

 

To make a summery salad supper you will need:  

  • two cups cooked chicken breast
  • one cup cubed melon (honeydew, cantaloupe, watermelon)
  • two medium sliced and peeled cucumber
  • 1/3 cup toasted almond slivers
  • For the dressing, mix 1/2  cup mayonnaise, one teaspoon dried dill weed, lime zest and salt and pepper.
  1. Mix together four main ingredients.
  2. Fold in dressing.
  3. Chill the salad for at least one hour before serving. This recipe will serve two people.

 

To make grilled kebobs you will need:

  • four boneless, skinless chicken breasts cubed
  • two cups zucchini, cubed
  • one Vidalia onion, cut into large chunks
  • one can pineapple chunks, drained
  • mushrooms
  • skewers
  1. Be careful not to cross contaminate the vegetables and raw meat.
  2. Thread a piece of raw chicken, zucchini chunk, onion slice and pineapple chunk on each skewer
  3. Repeat the process until the skewer is full. Leave a little space (half inch) between each chunk. 
  4. Use tongs to carefully place the skewers on a hot grill. Turn carefully after a few minutes for even cooking. 
  5. Check chicken for doneness before removing from the grill. Serve with a chilled green salad and iced tea or lemonade for a perfect summer dinner.

 

To make marinated grilled chicken you will need:

  • three pounds of boneless, skinless chicken breasts
  • one bottle raspberry vinaigrette dressing
  • one cup of water
  • two tablespoons of grated ginger
  1. Combine all ingredients. In a large bowl, combine the chicken, dressing, water and ginger.
  2. Cover and place in the refrigerator. Marinate for about four hours, or overnight if desired.
  3. Remove the chicken from the marinade. Discard the marinade.
  4. Carefully place the chicken over hot coals on a grill. Grill carefully, turning once, until the chicken reaches 180 degrees in the center. Remove from the grill.
  5. Serve with corn on the cob, a simple green salad and chilled watermelon for dessert.

 

To make walking tacos you will need:

  • one pound hamburger
  • one packet taco seasoning
  • one cup water
  • one can chili beans, drained
  • two cups shredded iceberg lettuce
  • two cups finely shredded cheddar cheese
  • six individual sized bags corn tortilla chips
  • salsa and sour cream
  1. Thoroughly brown hamburger in a skillet. Drain a;; excess grease. 
  2. Add water and taco seasoning to the hamburger. let the mix simmer  for about ten minutes. 
  3. Add beans. Stir in beans and heat through.
  4. Cool the mixture slightly open the bags of tortilla chips at the top only. Add a spoonful of meat mixture and top with lettuce, cheese, salsa and sour cream.
  5. Clip the bags together and take the walking tacos to your next summer destination.
