5 Thanksgiving Dinner Recipes For Two

  • 1 chicken or 2 Cornish game hens

  1. Instead of preparing a turkey, center your Thanksgiving dinner for two around a chicken or two Cornish game hens. Preheat the oven to 400F. Clean your fowl, removing any organs from the cavity, and place it into a roasting pan.  Put a spring of thyme and a clove of garlic into the cavity, and use a twist tie to bind the legs together. Rub the outside of the bird(s) with olive oil, salt, and pepper. Roast a chicken for 50 -60 minutes or Cornish game hens for about twenty to thirty minutes.  Allow the meat to rest for fifteen minutes before carving.

Put the vegetables in a baking dish and bake them in a 400F degree oven for 30-40 minutes, until they are tender and browned.

Pour the mixture into a bowl and let it sit for 30 minutes, stirring it often, then 1/3 cup vodka and 3 Tbsp. orange liqueur.
