Baked Sweet Potatoes
Ingredients:
- 4 sweet potatoes
- 4 pats real butter
- Salt and pepper
Directions:
- Wash the sweet potatoes and then take a fork and poke a few holes around the potatoes. Place the potatoes on the oven rack and bake in a very hot 400 degree oven.
- Bake the potatoes for 1 hour or until done. Remove the potatoes and split them open with a knife.

Ingredients:
- 1 teaspoon coriander seeds, cracked
- 1 tablespoon virgin olive oil
- 3 tablespoons almonds, slivered
- 1 green onion, chopped
- 1 garlic clove, minced
- 1 teaspoon ginger, minced
- 1 pound broccoli florets
- 2 tablespoons red wine vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 teaspoons sesame seeds
Directions:
- Steam the broccoli florets until they are 3/4 way done. Place the almonds in a dry small non-stick skillet and toast them lightly.
- In a non-stick skillet add in one tablespoon of virgin olive oil. Add in the broccoli, ginger, garlic, coriander seeds and green onions.
- Stir fry the veggies for two minutes until the onions are translucent and the broccoli is finished cooking. Remove from the stove and add in the almonds.
- In a small mixing bowl place the red vine vinegar, soy sauce and sesame oil. Mix well.
- Place this vegetarian diet recipe for Christmas on a decorated serving plate. Lightly sprinkle some of the dressing and then top with the sesame seeds.
Note: You can add a few tablespoons of vegetable stock or water if needed when stir frying the broccoli.

Ingredients:
- 3 cups vegetable stock
- 1 small potato
- 1/2 cup peas
- 1/2 cup carrots, diced
- 1 green onion, chopped
- 1/4 cup vermicelli
- Salt and pepper
Directions:
- Place the vegetable stock, potato, peas, carrots and onion in a stock pot. Bring to boil and cook until almost done.
- Add in the vermicelli noodles and cook an additional ten minutes, stirring occasionally. Add salt and pepper.

Ingredients:
- 1 large cucumber, diced
- 2 tomatoes, diced

- Place all the ingredients in a bowl. Mix well.

- 1 pound Brussels sprouts

- Cut off the ends of the Brussels sprouts and remove some of the outside leaves.
- Place the Brussels sprouts in a large bowl with the oil, salt and pepper. Mix everything and make sure all the sprouts are coated.
