1. Mushroom Casserole: This dish offer vegetarian low carb with loads of flavor.

Ingredients:

  • 12-oz. fresh mushrooms
  • 1/4 cup onion
  • 1/2 stick butter
  • 1/3 cup heavy cream
  • 2 large egg yolks
  • 1 cup Swiss cheese
  1. Preheat oven to 375 degrees.
  2. Sautee mushrooms in a skillet with butter.
  3. In a bowl mix ingredients (minus cheese)
  4. Sprinkle cheese bottom of baking dish.
  5. Place mushrooms over that and then add ingredients from bowl.
  6. Bake 30 minutes.

2. Frittata with Ricotta is a delicious low carb holiday dish that any vegetarian would love.

Ingredients:

  • 6 eggs
  • Salt and white pepper
  • 1 cup ricotta cheese
  • 1/4 cup Parmesan cheese
  • 1 1/2 tblsp chopped marjoram
  • 1 small clove garlic
  • 2 tbls olive oil and melted butter
  1. Preheat broiler.
  2. Mix eggs, salt and white pepper in a bowl.
  3. Stir in cheeses, marjoram and garlic.
  4. Fold in egg.
  5. Cook about 12 minutes, then brown under broiler.

3. Vegetable Stew: Always a vegetarian favorite and this holiday low card stew is a true treat.

Ingredients:

  • 1 onion
  • 1 bag (8 oz) sliced carrots
  • 1 can (10 oz) tomatoes
  • 1 cup chopped celery
  • 1 lbs egg plant chopped
  • Pinch salt and pepper
  • 4 cups vegetable broth
  1. Prepare all vegetables. Ensure they are washed first.
  2. Place into broth and bring to a boil.
  3. Add salt and pepper to taste.
  4. Cook until the vegetables are soft.

4. Cloufotis is a wonderful vegetarian low carb holiday dish.

Ingredients:

  • 3 chopped tomatoes
  • 4 medium mushrooms
  • Pinch salt
  • 4 eggs
  • 5 tbsp cream
  • 2 tbsp fresh chives
  • 3/4 cup Cheddar cheese
  1. Preheat oven to 375 degrees.
  2. Add salt to tomatoes and mushrooms.
  3. Mix eggs, chives and cream.
  4. Fold in cheese.
  5. Add to vegetables. Cover with more cheese. Cook for 20 minutes.

5. Holiday Salad: A low carb vegetarian holiday salad both festive and tasty.

Ingredients:

  • 4 chopped apples
  • 1 head romaine lettuce
  • 1 cup chopped almonds
  • 2 cups mandarin oranges
  • 1 cup shredded carrots
  1. Shred lettuce and add to large bowl.
  2. Place in apples, almonds and carrots. Toss.
  3. Top off with oranges.
  4. Garnish with radish, blueberries or pecans of desired.
