- 1 bunch collard greens, cleaned and chopped
- 1 large tomato, chopped
- 1 tbs. olive oil
- ¼ tsp. ground cinnamon
- 1 tsp. ground cumin
- 1 tbs. fresh ginger, grated
- 1 small onion, chopped
- ½ tsp. ground coriander
- sea salt to taste
- Saute the onion, ginger, cumin, coriander, cinnamon, and sea salt in a medium-sized skillet with the olive oil, until soft.
- Add the tomato, stir well, and cook for 5 more minutes.
- Add the collard greens, mixing all the ingredients, and cook for 10 more minutes, or until the collard greens are soft.
- Serve hot.
Agave Glazed Carrots Vegetarian Side Dish For Christmas
- 6 medium carrots, peeled and cut lengthwise
- ¼ cup agave nectar
- cooking oil
- ¼ cup fresh squeezed orange juice
- 1 pinch ground cinnamon
- Mix all the ingredients in a baking dish, stirring well.
- Bake for 20 - 25 minutes at 350 F.

- 10 oz. baby spinach
- 4 garlic cloves, minced
- olive oil
- ½ cup onion, finely sliced
- ½ cup pecans, finely sliced
- sea salt and pepper
- Saute the onion in the olive oil in a large skillet over medium heat, until soft.
- Add the garlic, and cook one more minute.
- Add the spinach, and mix well, so they get coated with the garlic mixture. Cook for 2 minutes.
- Add the pecans, combine well, and cook one more minute.
- Remove from the heat, and season with sea salt and pepper.
- Serve warm.
Greek Potatoes Vegetarian Side Dish for Christmas
- 8 medium red potatoes, unpeeled and chopped
- 2 garlic cloves, minced
- 2 tbs. fresh mint leaves
- 2 tbs. fresh dill
- the juice of a fresh lemon
- 1 tbs. olive oil
- 1 small onion, finely sliced
- sea salt and pepper
- Boil the potatoes in water, until soft.
- Saute the garlic in the olive oil over medium heat in a small pot, until lightly golden.
- Remove the pot from the heat, and add in the mint, dill, lemon juice, salt and pepper.
- Drain the cooked potatoes, and place them in a large bowl. Pour in the garlic mixture.
- Add the onion, and toss well.
- Serve warm.
Fried Rice Vegetarian Side Dish For Christmas
- 1 cup brown rice
- 1 tsp. fresh ginger, grated
- 2 tbs. olive oil
- 1 cup broccoli, cut into small florets
- 2 cups vegetable stock or water
- 2 tsp. soy sauce
- 1 bell pepper, diced
- Saute the rice, onion, and ginger in the olive oil in a medium-sized saucepan over medium heat for 1 minute.
- Add the broccoli and the bell pepper, and cook for 5 or 10 more minutes.
- Add the rest of the ingredients, and bring to a boil.
- Cover the saucepan, and reduce the heat. Simmer until the liquid has been absorbed.
- Serve hot.
