5 Weight Watcher Slow Cooker Meals
These 5 Weight Watchers slow cooker meals will fill you up without making you feel guilty. Slow cookers are a great way to have a warm hearty meal but still stay on track with your Weight Watchers diet. You can get them ready before you leave for work and have dinner ready when you get home.
1. Lemon Garlic Chicken
- 8 boneless and skinless chicken breasts
- 10 cloves of garlic, minced
- 2 onions, chopped
- 2 cups low sodium chicken broth
- 1/4 C lemon pepper seasoning
- 4 tbsp paprika
- 2 tbsp chopped parsley
- 1 tbsp kosher salt
- 1 tsp lemon zest
- Rinse chicken and pat dry
- Mix lemon pepper seasoning, paprika, and salt. Rub on chicken.
- Place chicken in slow cooker and cover with chicken broth, garlic, parsley, onion, and lemon zest.
- Cook on low heat for three to four hours.
2. Sweet Potato Soup
- 2 C fat-free chicken broth
- 4 sweet potatoes
- 1 1/2 C fat free half and half
- 2 packets sugar substitue
- 1/2 tsp allspice
- 1 tsp salt
- 1 tsp dry mustard
- Peel and slice sweet potatoes. Place in slow cooker with chicken broth.
- Cover and cook on medium for three hours.
- With immersion blender blend potatoes until smooth.
- Add half and half, sweetener, salt, dry mustard, and all spice.
- Cover and cook on medium for one to three hours.
3. Potato and Bacon Chowder
- 2 C potatoes, cut into 1/2 inch cubes
- 1 carrot, diced
- 1 C leeks, chopped, white part only
- 1 garlic clove, minced
- 4 Cups fat free chicken broth
- 1/2 Cup uncooked barley
- 1 bay leaf
- 1/4 tsp dried thyme, crushed
- 1/4 tsp black pepper
- 4 oz. Canadian bacon, cut into 1/4 inch pieces
- 1/2 cup fat free evaporated milk
- 2 oz fat free half and half
- In slow cooker combine potatoes, carrots, leeks, garlic, broth, barley, bay leaf, thyme, pepper, and bacon.
- Cover and cook on low for six hours.
- Stir in evaporated milk and half-and-half.
- Heat through, uncovered for ten minutes.
4. Chicken Parmesan
- 2 tsp olive oil
- 4 skinless, boneless chicken breasts
- 1 1/4 cups crushed tomatoes
- 2 cloves garlic, crushed
- 1 tsp sugar
- Pinch of celery seeds
- 2 tbsp dry red wine
- 1/2 cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
- Heat oil in skillet. Add chicken and saute until lightly browned.
- Put chicken and next five ingredients in the slow cooker. Cover and cook on low until chicken is cooked through, about six to eight hours.
- Combine cheeses in small bowl and sprinkle over chicken. Don't stir.
- Cook until cheese is melted, about fifteen minutes.
5. Cherry Cobbler
- 1 can cherry pie filling
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1/4 cup margariine, melted
- 1/2 cup milk
- 1 tsp baking powder
- 1/2 tsp almond extract
- 1/4 tsp salt
- Spray inside of slow cooker with cooking spray. Pour in pie filling.
- Beat remaining ingredients with spoon until smooth.
- Spread batter over pie filling. Cover and cook on high for one and half to two hours.
