Four Point Egg Salad Sandwich Roll Up

You Will Need:

  • A low point tortilla, such as La Tortilla Low Carb tortillas which are just one point apiece
  • Three hard boiled eggs. Use the whites only.
  • Two teaspoons mayonnaise
  • One stalk celery
  • Lettuce
  • Tomato
  1. Mash the egg whites and mayonnaise together.
  2. Dice celery into very small pieces. Combine with the egg white mixture.
  3. Spread egg white mixture onto tortilla. Top with lettuce and tomato and roll up.

Five Point Stuffed Tomato Tuna Salad

You Will Need:

  • One large tomato, cut in half and scooped out
  • One half cut canned tuna (packed in water)
  • Two teaspoons mayonnaise
  • One half teaspoon mustard
  • One half stalk celery, chopped fine
  • Pepper
  1. Mix the tuna, mayonnaise and mustard in a large bowl. Add pepper to taste.
  2. Stuff half of the scooped out tomato with the mixture and top with chopped celery.

Three Point Turkey Arugula Sandwich

You Will Need:

  • One Pepperidge farm sandwich round
  • Four ounces turkey breast
  • One teaspoon mustard
  • Arugula
  • Salt and Pepper
  1. Place turkey breast on one half of the sandwich round. For a crunchier texture, toast the round before adding turkey breast. Add salt and pepper to taste.
  2. Top with arugula.
  3. Spread mustard on other half of sandwich round and top sandwich.

Two Point Turkey Pickle Roll Up

You Will Need:

  • One dill pickle spear
  • Two slices of lunchmeat turkey
  • One slice low fat cheddar cheese
  1. Lay turkey slices so that they slightly overlap.
  2. Place cheese on one of the turkey slices.
  3. Add pickle in the middle of the slices. Roll up and eat!

Three Point Cheese and Pineapple Salad

You Will Need:

  • One half cup 4% cottage cheese (don't even bother with the lower fat cottage cheeses. The texture is horrible)
  • One cup freshly sliced pineapple
  • One stalk celery, chopped fine
  1. Place cottage cheese in a small bowl and mash a bit to break up the larger curds.
  2. Add the celery and pineapple. Mix well and enjoy.
